Quick and Easy Chicken Noodle Soup

Pretty good, not Panera chicken noodle soup soup but a close second. I used 3 cans chicken broth, 2 veg broth. Added twice as much celery and carrots and even extra chicken. Cooked the noodles separate and kept them that way- just added them to each serving as we ate this soup over a few days. Will make again! Used a rot chicken for ease of prep. Lots of veggies so healthy but will likely use lower sodium broth next time- not b/c it was too salty but just to try to make it healthier.

PHILLY Bavarian Apple Torte

Yep- this really is as good as they say. I used mostly splenda for the sugar and light cream cheese. Golden delicious apples sliced thin- 4 average sized appled allowed for about 3 layers or nicely placed apples. This is a light dessert- kind of thin- If preparing for more than 6 adults, I'd double it. Tried a piece as is and one with caramel drizzled over the top. I didn;t think the caramel was necessary. It's just a simple, easy dessert. Even hubs loved it and he's usually a choc/pb kind of guy.

Mouse's Macaroni and Cheese

Made as stated except I had to use 8 oz of a colby jack/ cheddar cheese mix (the kraft kind with cream cheese) instead of American b/c I could not find it. I forgot to cover this in the oven but it still turned out great. Really good. The only thing that holds it back from a 5 star recipe is that it was just really good- like most homemade mac n cheese recipes- nothing stands out about this one. Will likely make again especially of I can find the right kind of Amerciacn cheese

Slow Cooker Pulled Pork

Used a 4 LB pork shoulder and poured and entire 2 liter on top to cover it on the crock pot. Used 2- 18 oz bottles of Sweet Baby Ray's BBQ sauce after I drained the root beer (after about 7 hours). The meat was fall apart delicious. Let it sit in the crock with the BBQ sauce for about an hour before serving. We like it with coleslaw and extra sauce on top. It was good but I was expecting WOW and didn't get it with this. Might try it again- it is super easy.

Fluff Dip for Fruit

So easy and great tasting. I wasn't sure I could use the sugar free/fat free kind of instant pudding since it is only a 1 oz pkg and the recipe says to use a 3 oz pkg which is the full sugar/fat version. Used the 1 oz pkg afterall with light cool whip and a little almond extract (didn;t have any amaretto). Turned out really good- sat in the fridge fine for a couple days. Will make again. Would probably be best with the full fat version of pudding but for just us the 'lighter' version worked great. We liked it best with strawberries but bananas and apples were a close second.

Chunky Cheesecake Brownies

Used splenda, light cream cheese and only 1/2 cup whole wheat flour. These were really easy and great. Careful not to overcook- I checked mine at 25 min and thought they needed an extra 4 min or so- should have taken them out at 25 min. The middle was the best part. Definitely serve cold. I loved the choc chips in the cream cheese layer- not sure why some reviewers suggest to leave them out. The batter was hard to spread in the pan- there just wasn't a lot there but they turned out fine. I frosted mine with rich choc frosting from this site. Delicious.

Emily's Easy Sausage and Spicy Tomato Dip

I halved the recipe. I used a 9.5 oz bag of Jimmy Dean turkey sausage crumbles (delicious and a time saver), a 10 oz can of Rotel tomatoes and 8 oz light cream cheese. I threw it all in the crockpot. What an easy and fast dip. Delicious! Noone would guess it took all of 1 minute to make! Will definitely make this again and again.

Sweet Apple Chicken Sausage, Endive, & Blueberry Salad with Toasted Pecans

Hubs liked it more than I did. The package of sausage gave the option of microwaving so I opted for that due to a time constraint. The kids wouldn't touch the sausage and I didn't love it although it was better in the salad. Next time I will def grill or brown it on the stove. The dressing was ok....seemed to be missing something....? I like the mix of ingredients and will try this one again.

Bacon 'n' Egg Bundles

Clever. Used turkey bacon- had kind of a hard time wrapping the bacon in a circle so ended up just kind of placing strips in the egg. Fun, lots of options, and the kids LOVED them!

Zucchini Pineapple Bread II

I did change the recipe a bunch so not sure how it is as written but to be fair I stuck with 5 stars. I read lots of reviews for this bread and other zuc/pin bread recipes so I based my changes off of those. I was really trying to make a healthier snack so I used 2 eggs and 2 egg whites, 1 cup applesauce in place of the oil, splenda in place of the sugar and whole wheat flour. I used extra zucchini (from the food processor for ease), extra pineapple and about 1 cup raisins. I added 1-1/2 tsp cinnamon and 3/4 tsp nutmeg and increased the baking soda to 1-1/2 tsp. I baked in 3 loaf pans (they were 8X4X2 roughly) and it took almost 2 hours for them to be done. I wasn't so sure they were done even then b/c they were so moist, almost gooey. The end result was pretty great tasting. Next time I will use just a little extra zucchini and pineapple to cut the gooey-ness a bit but I will do everything the same. The kids LOVED this! I was going to give a loaf away but we ended up eating all of it!

Peanut Butter Chicken Skewers

Made as stated except did not serve over cabbage with green onions. The sauce is really good on the chicken. Everyone loved the leftover sauce for dipping. Served w a cabbage salad with the peanut sauce from the Asian coleslaw recipe from this site. Went together really well.

Rosemary Ranch Chicken Kabobs

I was a bit disappointed after all the rave reviews. This was good but not WOW good. I did have to use dried rosemary so maybe fresh is what would take this over the egde....? Anyway, I cut the salt and oil by half as suggested by others. Made extra kabobs with green and yellow peppers and zucchini. Might try this again if I end up with fresh rosemary in the house.

Green Grape Salad

More of a 4.5 stars- really good. I used a mix of red and green grapes. Cut lots of calories by using fat free sour cream, a mix of half fat free cream cheese/half light cream cheese, and splenda. I mixed the pecans with splenda brown sugar and just mixed in each serving because I afraid it would get kinda of gooey/soggy just sitting in the salad. Will make again- the whole fam really liked it. Not so sure it would be party worthy with all the other great fruit salad recipes out there but it is really good.

Grilled Chipotle Sweet Potatoes

We do lots of sweet potatoes in this house so I was looking forward to this on the grill. It was just ok for us. The flavoring was just average compared to other sweet pot fry recipes. They didn't seem to cook to our liking on the grill either. We'll stick to the oven.

Creole Red Beans and Rice

Really really good! I did as another suggested though and cut the pepper by half and omitted the salt as the 1st ingredient in my creole seasoning was salt. I also used only 2.5 quarts water since it seemed like a lot of water. Next time I will use 2 quarts only. I used turkey smokd sausage which came in a 13 oz package so next time I will double the sausage as there really wasn't much. This was so easy and tasty! Hubs loved it and went back for 2nds which is rare!

Raw Pad Thai

Had to use peanut butter, regular soy sauce and regular honey as that is what I had. I love the salad part of this but the dressing was way to heavy on the miso flavor for me. Hubs liked it alot though. I actually made a similar PB dressing from the asian coleslaw recipe on this site to use on the cabbage/zucchini mixture. We added fresh cilantro too. Will def make the salad part again but stick to the other dressing.

Michelle's Honeybun Cake

Wow. I had a box of yellow butter recipe cake mix I needed to use and came across this recipe. I did not have high hopes since it was the butter recipe kind of mix and i only had fat free sour cream. Also, it just doens't look like a very exciting cake. I tried a piece shortly after I poured the icing on- it was not very good at all so I put it in the fridge thinking it might be better cold. A few hours later I tried a small piece and could not stop! Hubs even LOVED it and he is usually a strict peanut butter/chocolate dessert lover. Took some to my parents and they also loved it. Even my 6 year old said "oh my, this cake is delicious!" Will definitley make again- maybe with a bit extra cinnamon and I might bake at 325 since I use a non-stick pan. Awesome. You won't be sorry for trying this- except for when your pants don't fit anymore from eating it all!

Mock Caprese Salad

I'm impressed. Love mozz caprese but don't love the calories involved with all that cheese. This is a great alternative. Lots of tomatoes and too much balsamic vinegar. I started eyeballing all the ing rather than measuring after I made this a few times- like 6 times in the last week! I like it heavy on the tomatoes with just a splash or 2 of the vinegar. Hubs even loves it! I have added cut up red onion which was a nice addition. Great way to use up all the fresh basil I have!
