Quinoa and Black Beans

I actually loved this! I left out the corn (diet) and used 1 can pinto beans instead of 2 black- what I had on hand and also I think 2 cans would be a lot of beans. This had kind of a kick to it- the kiddos thought it was too spicy. I think it had the right amount of spice. Will def make again- possibly using 2 cans black beans b/c I love black beans- either way will be enjoying this one again.

Mexican Turkey Burgers with Pico de Gallo

Left out the egg (diet) and used extra of all the seasoning. Too much onion probably but thats no fault of the recipe- just a big onion I guess. Pretty good flavor- not outstanding. I did not make the pico b/c I wanted to eat these with gaucomole and salsa. Might make again. Quick and easy.

Kay's Spaghetti and Lasagna Sauce

Pretty good. I used 1 onion, not 2- just seemed like too much. I had to add some extra spices at toward the end of the cooking time as it seemed a bit bland. Will likely make again- maybe use a jar od sauce in place of the canned tomatoes as others suggested.

Spaghetti Squash I

Good but not outstanding. I sprayed my pan with Pam instead of using oil. Omitted the olives- don't like them. I sprinkled my squash with salt pepper garlic powder and basil before baking. Might make again but would need to add somthing..... not sure what this is missing- maybe more of a tomato based sauce......? Anyway, used fat free feta and it was a nice addition- a nice change from parmesan.

Baked Spaghetti Squash Lasagna Style

Just recently discovered spaghetti squash- WOW! What a great alternative to pasta. I used a chicken bouillion cube as that is what I had. Omitted the olives- don't like them. Cooked the squash for 50 minutes after sprinkling with a little Italian seasoning. Added a 9.5 oz bag of turkey sausage crumbles to the tomato mixture. Used fat free mozz cheese. Baked in a 9X13 dish. Delicious! Will def make again but I think I will try another reviewer's suggestion of using jar spaghetti sauce in place of the stewed toms- not a fan of those big chunks. Pretty good warned up the next day but best when fresh from the oven.

Slammin' Salmon

Really pretty good. Halved the peanut oil to cut calories. A bit owrried about it being too spicy for the kids but it turned out not spicy at all. Will likely make again but the Delicious Salmon recipe from this site is hands down the best salmon!

Chipotle Crusted Salmon with Triple Berry Sauce

More like 3 stars for me but 5 for hubs so 4 stars it is. Used skinless salmon. Had to use a mixture of hald strawberry half apricot preserves as that is all I had. Will likely make again but double the rub ingredients- just didn't seem like much. Also- made the kids an alternative salmon b/c I thought this would be spicy for some reason but it wasn't spicy at all.

Cha Cha's White Chicken Chili

It really is as good as they all say. Like others, I changed it up a bit- sprayed my pot with Pam instead of using oil, used 2 cups chicken broth, pureed 1 can of white beans (which I drained before I realized the recipe calls for the whole can..... noxt time I will not drain), 1 can kidney and 1 can black beans both with juices, omitted the jalapenos and the cheese (calories) and cut cayenne in half (for the kids). Kids even liked it! Definitely better when a little shredded cheese (fat free) and sour cream (fat free) were added but they are not necessary.

Baked Ham and Cheese Party Sandwiches

Wow. Even better than expected and so easy. We made these for New Years and then again on New Years Day. Used the sweet Hawiian rolls that most other reviewers used and would definitely use the same again. Used a little extra dijon mustard in the butter mixture and would do so again. Delicious! Thanks!!

Glazed Apple Cream Pie

This went over really well at Christmas. I used 3 apples and extra cinnamon as others suggested. We warmed each slice, served with ice cream and a little caramel drizzle. Will make again.

Double Layer Pumpkin Cheesecake

So much tastier than your average pumpkin pie. I added 4 oz cream cheese to beef up the 1st layer a bit. Poured 1 and a half cups in the pie crust, then put it int he freezer while I mixed up the remaining ing. I went a but heavy on the spices and pumkin as another reviewer suggested. When I 1st tasted the pumpkin mixture I was worried- it wasn't great on its own- thought I went overboard on the spices but the end result was fantastic. i think the cream cheese layer is meant to mellow the flavor of the pumpkin layer. This went over really well at Thanksgiving. Will definitely make again.

Chicken Tortilla Soup V

Used a rotisserie chciken so I doubled the recipe. It was very bland at the end- I'm amazed it has SO many rave reviews. I added a can of rinsed black beans, a package of taco seasoning and some fresh cilantro at the end and it was so much better- 4 stars. It might earn that 5th star topped with chips sour cream and cheese. I was trying to keep it healthy though!

Praline-Pumpkin Mousse Cornucopias

Wow these are good. Really not too complicated- just takes a while for only 6 servings. I sprinkled the dough with a cinnamon/sugar mixture before baking. The caramel really makes these. I didn;t add pecans- just warmed up some caramel ice cream topping and generously drizzled it over the top- delicious.

Smokin' Scovilles Turkey Chili

Impressive. I really dislike smoke flavoring and although this was on the verge of being too 'smokey' it turned out really good. The little bit of sweet was such a nice addition. I used a Pam in my pan instead of olive oil. I left out the habenero thinking the kids would be more likely to eat this (which they didn't eat anyway, b/c it was still too spicy) and I had to use salsa instead of tomato sauce as that is all I had. Next time, I will be sure to have everything chopped and/or measured beforehand b/c I feel like a lot of the liquid was simmered away since it was taking me forever to get everything in the pot.

Pumpkin Parfait

Really more of a 3 star for flavor but I used a large box of pudding (Ithink it was 1.5 oz) and the end result had a really strong sugar substitute flavor. It did sit up well and it was easy. Not sure that a small box of pudding would make that much of a difference on getting rid of that flavor or not. Would try it with a regular box pf pudding but then its not so healthy and I feel like I should just have a real piece of pie if I;m going to blow my calories for the day you know?

Hot and Spicy Tofu

I cut the peanut oil down to 1/2 TB to cut calories. The tofu browned nicely in a Pam sprayed pan with the small amount oil. I didn't love the sauce- too much soy sauce I think. It was way too spicy for the kids. The right amount of spice for the adults but the overall flsvor was just average. Will not make again.

Death By Chocolate III

I've had this recipe saved for a year and a half and was hesitant to try it b/c, really, how good can brownies topped with pudding a cool whip be? Finally tried it and I am so glad we did. So easy and delicious and a great presentation. I used Ghiradelli triple fudge (?) brownies (they are the best) and 2% milk for the pudding. I used light cool whip and bought the Heath bar already chopped in a bag. Perfection. I drizzled the top with hot fudge and Heath. Next time I will use extra Heath as Hubs thought it really needed more and I might drizzle hot fudge between the layers. This did not last long in our house! I can see using a 9X13 dish- not as pretty but a bit quicker and easier to assure that you get all the layers in each serving.

Angie's Dad's Best Cabbage Coleslaw

Used a bag of slaw mix and halved everything else. Used 1 TB olive oil in place of the veg oil. It was good but not outstanding. Might try apple cider vinegar next time.
