Glazed Apple Cream Pie

This went over really well at Christmas. I used 3 apples and extra cinnamon as others suggested. We warmed each slice, served with ice cream and a little caramel drizzle. Will make again.

Double Layer Pumpkin Cheesecake

So much tastier than your average pumpkin pie. I added 4 oz cream cheese to beef up the 1st layer a bit. Poured 1 and a half cups in the pie crust, then put it int he freezer while I mixed up the remaining ing. I went a but heavy on the spices and pumkin as another reviewer suggested. When I 1st tasted the pumpkin mixture I was worried- it wasn't great on its own- thought I went overboard on the spices but the end result was fantastic. i think the cream cheese layer is meant to mellow the flavor of the pumpkin layer. This went over really well at Thanksgiving. Will definitely make again.

Chicken Tortilla Soup V

Used a rotisserie chciken so I doubled the recipe. It was very bland at the end- I'm amazed it has SO many rave reviews. I added a can of rinsed black beans, a package of taco seasoning and some fresh cilantro at the end and it was so much better- 4 stars. It might earn that 5th star topped with chips sour cream and cheese. I was trying to keep it healthy though!

Praline-Pumpkin Mousse Cornucopias

Wow these are good. Really not too complicated- just takes a while for only 6 servings. I sprinkled the dough with a cinnamon/sugar mixture before baking. The caramel really makes these. I didn;t add pecans- just warmed up some caramel ice cream topping and generously drizzled it over the top- delicious.

Smokin' Scovilles Turkey Chili

Impressive. I really dislike smoke flavoring and although this was on the verge of being too 'smokey' it turned out really good. The little bit of sweet was such a nice addition. I used a Pam in my pan instead of olive oil. I left out the habenero thinking the kids would be more likely to eat this (which they didn't eat anyway, b/c it was still too spicy) and I had to use salsa instead of tomato sauce as that is all I had. Next time, I will be sure to have everything chopped and/or measured beforehand b/c I feel like a lot of the liquid was simmered away since it was taking me forever to get everything in the pot.

Pumpkin Parfait

Really more of a 3 star for flavor but I used a large box of pudding (Ithink it was 1.5 oz) and the end result had a really strong sugar substitute flavor. It did sit up well and it was easy. Not sure that a small box of pudding would make that much of a difference on getting rid of that flavor or not. Would try it with a regular box pf pudding but then its not so healthy and I feel like I should just have a real piece of pie if I;m going to blow my calories for the day you know?

Hot and Spicy Tofu

I cut the peanut oil down to 1/2 TB to cut calories. The tofu browned nicely in a Pam sprayed pan with the small amount oil. I didn't love the sauce- too much soy sauce I think. It was way too spicy for the kids. The right amount of spice for the adults but the overall flsvor was just average. Will not make again.

Death By Chocolate III

I've had this recipe saved for a year and a half and was hesitant to try it b/c, really, how good can brownies topped with pudding a cool whip be? Finally tried it and I am so glad we did. So easy and delicious and a great presentation. I used Ghiradelli triple fudge (?) brownies (they are the best) and 2% milk for the pudding. I used light cool whip and bought the Heath bar already chopped in a bag. Perfection. I drizzled the top with hot fudge and Heath. Next time I will use extra Heath as Hubs thought it really needed more and I might drizzle hot fudge between the layers. This did not last long in our house! I can see using a 9X13 dish- not as pretty but a bit quicker and easier to assure that you get all the layers in each serving.

Used a bag of slaw mix and halved everything else. Used 1 TB olive oil in place of the veg oil. It was good but not outstanding. Might try apple cider vinegar next time.

Fish Fillets Italiano

So easy and fast and delicious. Hubs loved this. I sprayed the pan with Pam instead of using olive oil. I omitted the olives (don't like them) and used a 10 oz can of Rotel tomatoes as that is what I had. I added about 1/4 cup tomato paste to make up for the tomatoes I didn't have. Since other reviews mention a bland flavor I went ahead and added a packet of Good Sense Italian dressing mix along with dried parsley. Used chicken broth instead of wine and sprinkled parmesean cheese over each serving. It actually turned out a bit spicy for the kids- the Rotel did it I think- but the adults thought it was awesome. Used cod that I mostly thawed in cold water 1st and they took about 10 minutes in the simmering sauce.

Sam's Famous Carrot Cake

Mixed reviews- some of the family really loved this-said it was the best carrot cake they have ever had. Others just thought it was ok. Carrot cake is not their favorite to be fair. I added a little nutmeg, ran the pineapple, carrots and coconut through a processor, used finely crushed walnuts and boiled the raisins in orange juice prior to baking. Edit 3/13- The family that loved this brought it up on Easter- disappointed that I didn't make it for Easter! Turns out they say it was the best carrot cake they had ever had! Will certainly make again with the above mentioned changes.

Cream Cheese Frosting II

Really good frosting although I have a similar version that calls for twice the vanilla and after having both within 2 days of each other- the one with more vanilla is better. I used this to frost a carrot cake (sam's from this site) and it was good but not enough to frost the double layer. I ended up having to make another 1/2 batch.

Salami, Cream Cheese, and Pepperoncini Roll-Ups

I'm amazed. I made an entire plate of these (1 and a half X the recipe) and they were gone within the 1st half hour of our get together. I chopped up the pepperocini and mixed it into the cream cheese (light). So easy. No one could believe there were only 2 ingredients in the salami.

Witches' Hats

Really cute idea although I'm thinking a little frosting would work better than the honey. Honey was kind of drizzled over everything after a few of these were taken off the plate. Used dark choc fudge stripe cookies and dark choc kisses. Flavor is average b/c afterall, this is just a fudge strip cookie with a kiss on top :)

Halloween Ghosties

Very cute idea. Used reg size choc chips and they worked just fine. Did half white and then colored the rest with an oil based orange coloring. My 6 year old had fun placing all the eyes. Will likely make again for Halloween although the flavor is just average- more of just a cute thing to do.

Apple Pie Smoothie

Just ok. Imade apple juice ice cubes to use b/c I was afraid this would be too runny just using juice. Added a little splenda which helped. Might try it again. Just needs a bit of tweeking to get the flavor right I think.

Pumpkin-Pecan Braid

Not the greatest pumpkin dessert I've had but it was descent. Really have to like pumpkin b/c the filling is certainly dominating- not overpowering but really there. Easy. We liked it much better after it cooled, and even the 2nd day after sitting out on the counter.

Pumpkin Muffins with Streusel Topping

Its all about the topping. Will definitely triple the topping next time. I doubled it this time and it wasn't quite enough to cover the 18 muffins I ended up with. I used half whole wheat flour/ half white and I used splenda for the white sugar. I poured the batter into the muffin cups and let the kids put raisins and/or choc chips on top. We mixed them in with toothpicks. They ended up staying near the top of the muffin though so next time I will mix them into the batter before filling the cups. For 18 muffins with dbl the topping and splenda these equaled about 250 calories each. They certainly need raisins or choc chips b/c the bottom half of these without any were just too plain.

Sweet, Sticky and Spicy Chicken

The sauce didn't thicken. I browned the meat, removed it from the pan and added the sauce (which I doubled) to let it simmer a while to help in thickening it. Even added some cornstarch but it still never thickened. Added the chicken back after about 8 minutes. A couple minutes before it was ready I added broccoli that I had just steamed in the microwave. I cut the hot sauce (rooster sauce) down by half and it was still too spicy for the kids- not for hubs and me though! We liked the flavor, will likely make again ( it is easy) but it wasn't WOW.

Quick and Easy Chicken Noodle Soup

Pretty good, not Panera chicken noodle soup soup but a close second. I used 3 cans chicken broth, 2 veg broth. Added twice as much celery and carrots and even extra chicken. Cooked the noodles separate and kept them that way- just added them to each serving as we ate this soup over a few days. Will make again! Used a rot chicken for ease of prep. Lots of veggies so healthy but will likely use lower sodium broth next time- not b/c it was too salty but just to try to make it healthier.
