Chocolate Cookie Cheesecake

This was my 1st go at making a cheesecake- it was perfect! I didn't use all the sour cream mixture b/c I wanted to leave enough room in the top of the pan for the chocolate topping. Turns out the cake kind of deflated after a bit so there would have been room for the topping afterall. Next time I will use all the sour cream mixture. I cut the cinnamon in half and would do the same as it seemed like just the right hint of cinnamon. Be sure to use cookies that are just broken up and not completely crushed for the middle layer.

Baby Spinach Omelet

This was really just 3 stars for me but I gave it 4. It just had too much spinach in it for me but I wanted to be fair with my rating since if you are a spinach lover you would probably like it.

Black Pepper Beef and Cabbage Stir Fry

This was pretty good but I cut the black pepper in half. I'm glad I did b/c it was on the verge of too peppery even with just the 1/2 tsp.

Pepperoncini Beef

This is so easy and delicious! I used a venison roast b/c I have a frezzer full. I used lots minced garlic from a jar and then sprinkled the whole roast with a roasted garlic seasoning blend before I dumped the jar of pepperocinis in. Too spicy for my 5 year old but hubby and I loved it. He even said that it puts my family's Italian beef to shame!

Oven-Roasted Asparagus

I didn't use the parm cheese and this was delicious. Next time I might use the cheese for a different flavor. Either way, this recipe is so easy and great. I spread the asparagus out on a foil lined baking sheet and brushed on about 1 TB of olive oil then sprinkled with a roasted garlic seasoning blend, salt & pepper. Yum

Oatmeal Peanut Butter Cookies III

I can't believe how good these are! I followed the recipe exactly except for using a little extra peanut butter in the batter and the filling (we love PB in this house!). I think the amount of filling was perfect as written. They are definitely best the 1st day. By day 3 they were a little dry. I don't know how anyone could pass these up. Fantastic!!

Fried Broccoli

This is an easy way to cook broccoli. It was good- nothing special but I will likely make it again b/c we like spicy and it is healthy. I only used 1/2 TB olive oil to cut down on calories.

Lemon Barbeque Meatloaf

I can't believe how good this was! I'm not a huge meatloaf fan but I have a freezer full of venison that I need to use. I used 3 pieces of bread instead of 4. As others suggested, I made balls and cooked them in a greased muffin pan (about 30 minutes total). I kind of flattened the top and made a bit of a well to keep the sauce from sliding off. Sprinkled them with a little lemon pepper before putting them in the oven. I drained some excess liquid from the pan at the 15 minute mark. I didn't add cloves to the sauce b/c I didn't have any- won't use it next time anyway. They were so moist and flavorful. Perfect. Will definitely make again!!

Tofu Tacos I

We thought this was pretty good for what it is and I will liklely make it again. It did definitley have the the consistency of eggs but that didn't bother us. I couldn't find garden herb tofu so I used plain and added Mrs. Dash onion and herb mix with a little basil and garlic powder. It turned out too spicy for my 5 year old but hubby and I thought it was the perfect amount of spice. He even went back for seconds which was surprising since he was very skeptical about a tofu dinner.

Hot as Hell Hickory Beans

Made as stated except that I added 7 oz green chilis and only 2 TB chopped jalapenos. It still turned out pretty spicy but very tolerable. The flavor was good but nothing to write home about. We will eat these for the next few days (it makes a lot!) but I will likely not make them again.

Slow Cooker Buffalo Chicken Sandwiches

Delicious and so easy! I used the whole package of ranch mix and a smaller bottle of wing sauce than what the recipe called for (It's what I had- I think it was maybe 12 oz). I used Franks hot wing sauce and will definitley do it all again the same way. We liked it best with provolone cheese and ranch dressing. Soooooo good. I don't think you can go wrong with this one.

Stewed Cabbage

I'm always looking for good cabbage recipes since it is such a great diet food. I sprayed my pan with Pam instead of using butter and it worked well. I did end up adding just a little olive oil to keep the onions from burning on the bottom after about 10 minutes. I used about 4 celery stalks- we like celery. I also added 1 can kidney beans (rinsed and drained) the last 10 minutes to add some fiber and filling and it was wonderful! Will definitely be making again. I highly recommend the addition of kidney beans :)

Really very good. I used olive oil instead of veg oil. The sauce thickened very quickly. It had just the right amount of kick. Very easy and quick prep. Will definitely make again.

Brownie Batter + Cupcake = The SECOND BEST Cupcake. Ever

I used veg oil instead if canola oil. Thinking they would have turned out better if I made the batter as the boxes said to. They were just ok. I think plain brownies or plain cake would have been better. I sprayed the liners with Pam and didn't have any problems with sticking. I frosted half with chocolate frosting and the other half with Peanut Butter frosting from this site. I preferred the chocolate frosting ones. Will not make these again- darn, I had high hopes.

Dee's Roast Pork for Tacos

Made it in the crock pot. Turned out really good but next time I will definitely double the sauce as others have suggested. Made a great salad with fat free sour cream, salsa and cilantro.

Yikes. I had high hopes for this b/c of all the great reviews but this just wasn't good. Not sure if it was the adobo sauce stuff or the bacon but it just didn't mesh well together.

Asian Salmon

Just ok. The only change I made was cutting the oil in half and I did marinade the salmon for 4 hours. The flavor was good but nothing to write home about. Delicious Salmon from this site was much better and not as fattening from all the oil.
