Whole Wheat Pumpkin-Applesauce Muffins

For being 'healthy' muffins these were just ok. I wasn't expecting much so I was maybe a bit pleased but not impressed enough to make them again. As others suggested I did not use any oil- just used twice the amount of pumpkin. I used splenda sugars and twice the raisins since I didn't have pecans. I added about 2 TB flax seed. I think they would be better with chocolate chips- I know it takes away from the 'healthy' aspect but a few dark choc chips won't hurt- maybe would have been worth another star.

Apple Squares

I had high hopes for these but they were just average for us. Made them as stated except I used twice the amount of apples and went a little skimpy when measuring the sugars, as suggested by others. They were really hard to spread in the pan and turned out pretty thin. The topping was way too much and I even left some in the bowl because it looked like too much. I did drizzle them with a basic powdered sugar icing (which added a nice touch). I sent these to a potluck without trying them, based on the great reviews, and I am so regretful now. With all the great bar recipes out there, I will definitely not be making these again.

Debdoozie's Blue Ribbon Chili

I used Picante sauce as suggested by the woman who submitted this recipe. I used 1 can dark kidney beans and 1 can seasoned black beans (both with their juices) as that is what I had on hand. After I browned the meat with onion I added everything to the crockpot. I had to add another whole packet of chili seasoning half way through cooking as it was pretty bland. The final result was really good. Will likely make again.

Thai Cucumber Salad

I have made this probably 10 times in the last month. We LOVE it. I use splenda to cut calories. I leave the jalapenos out- they just don't do anything for this. I add chopped red onion and use lots of cilantro. We just sprinkle a few peanuts on each serving when we are ready to eat. Cocktail peanuts are also a must!

Iced Mocha Fusion Shake

Probably more like 4 stars but this is the best at home frozen coffee drink I have found and I have been searching a long time! I think I will try it with some coffee ice cubes in place of plain ice cubes to give it more of a coffee taste.

Easy Cream Cheese Danish

This turned out pretty good. Probably not Christmas morning worthy, but good. I spread sugar free strawberry preserves on half. I used light cream cheese and splenda to cut down on calories. Maybe full fat cream cheese would give it the extra star? I will probably make it again and put lines of strawberry preserves on top of the cream cheese mixture as spreading it all around made the top layer slide off very easily- making a very messy pastry. The fam liked it with the preserves better than the plain cream cheese.

Awesome Spicy Beef Kabobs OR Haitian Voodoo Sticks

Used Venison steaks since that is what I had. These are good and spicy. Will probably make again. Sprayed with olive oil instead of using veg oil. Added red pepper and onion to the kabobs and highly recommend this addition

Easy Chicken Satay

I had really high hopes for this based on other reviews but this turned out just ok for us. The chicken was kind of bland and the peanut sauce was average. Will not make again. The peanut sauce from one of the Thai salads on this site is so much better.

Surprisingly delicious. I really didn't know what to expect with this one but it turned out great. I forgot to add the avocado at the end- oh well... it was wonderful.. Definitely great on a cracker! Will make again and again.

Delicious Black Bean Burritos

Wow- these were awesome! I used weight watchers cream cheese and olive oil instead if veg oil. I also added a drained can of Rotel tomatoes which I will definitely do again. Excellent.

Healthy Garden Salad

I was so excited about this salad but it ended up being really boring to us. Not sure why it has all the great reviews. I might try it again since I have a whole bottle of grapeseed oil that I have no other use for. I will update my review if our opinion changes...

Marinated Tuna Steak

This was pretty good. I had to use apple juice instead of orange b/c that's all I had. I used 1/2 the amount of oil- olive instead of veg. I marinaded about 8 hours. Will make again with proper ing. and may update my review then. I think the orange makes a big difference.

Sesame Beef

I used 2 TB olve oil in place of the veg oil to keep this on the healthy side. I marinaded for about 4 hours and then grilled the steaks. Hubs forgot to put the sesame seeds on and we really didn't miss them but next time I will def add them. Great flavor for all the venison round steak we still have in the freezer

Curried Cashew, Pear, and Grape Salad

This was good but some bites had a very strong flavor of something not so great. I think it was maybe too much curry on the cashews. I will definitely try it again and update my rating if it's better. The pear was a great touch and next time I will use at least 2.
