Whole Grain Breakfast Cookies

Easy, soft, moist. Used low sugar craisins instead of cherries. Honey in place of the agave- will use less honey or the agave as suggested next time as too much honey gave it kind of an odd flavor. Definitely NOT diet food though- they may be 'healthy' but they are not for the calorie counter. I figured it all and 1 cookie was worth 100 calories (out of 32 cookies) Used applesauce in place of oil and peanut butter not almond

Nanaimo Bars III

Never heard of these before so I was intrigued based on all the good reviews. I used unsweetened coconut, chopped pecans in place of the almonds and cut the sugar down a bit in the middle layer. Doubled the middle and top layer as others suggested. Beat the egg into little spoonfuls of the middle layer to avoid the curdling issue others referred to. Not the best bar ever but definitely good enough to make again! We weren't sure what to expect with these so maybe they will grow on us more and more. Can't imaginer these without doubling middle and top layer

Fried Cabbage with Bacon, Onion, and Garlic

Pretty good and will make again with the following changes- no more than 1 tsp salt and cut the pepper in half. I left the bacon out- cut calories- just sprayed the pan with Pam first. Around 8 calories in every 1 ounce.

Cauliflower Pizza Crust

I used a full head of cauliflower and just microwaved it until it was tended. Then I put it in the food processor and then to a colander in an attempt to drain excess liquid. I used a mixture of parmesan and mozzarella cheese. Doubled all ingredients bc of the full head of cabbage. Spread it on parchment paper on a large pizza pan that has holes on the bottom. I had to bake this almost twice as long! It was definitely soggy! Flavor was pretty good though as a healthy version of crust. I will try this again just bc of the health factor but, along those same lines, I will reduce the amount of cheese to cut calories a bit. I think I will up the amount of cauliflower and then squeeze as much moisture out as possible. Edit 2/14- made again, this time processed the raw cauliflower, micro for 4 minutes, cooled on tea towel then squeezed all the moisture out. Added a few seasonings- oregano and basil- baked as stated. Delicious- much better and not so soggy this way. next time I will cut down on the overall cheese just bc that adds up to a lot of calories and let's face it- if you are going to put that much cheese on then you should just eat a real pizza!

Chocolate Chip Cheesecake Brownies

Average at best. I read all the reviews and did add 1/4 cup extra sugar to the cream cheese mixture and 1/2 cup white chocolate chips in an attempt to give it more flavor as that was a common complaint in the reviews. They still turned out pretty bland. The cookie part was rather dense and it was very hard to spread a top layer as it used a TON of the batter just to cover the bottom of the pan. I ended up just placing stretched out blobs on top which was fine just time consuming. Won't make again. 3 stars - I'm being generous.

Baked Spaghetti Squash with Beef and Veggies

Kind of disappointing. It would probably be better as the recipe states- with all that cheese. I cooked it with cheese sprinkled on half so I could keep my calories low. 2 stars for me with no cheese and 3 stars from the rest of the family with the cheese.

Famous Meatballs

We thought these were just ok. I did double the sauce and could have tripled it. Used extra pineapple as it came in 20 oz cans. used the pineapple in syrup as others suggested- also I have a similar recipe that calls for the syrup kind. My mother-in-law makes similar meatballs and hers are wonderful but these were just average. In fact, a week after I cooked these for New Years they remain in the fridge untouched- unusual in this house!

Jet Swirl Pizza Appetizers

These were a hit for New Years! I was careful not to stretch the dough too far so it wouldn't tear. I used a bit extra mozz cheese. Baked 2 on the same cookie sheet so cooking time was increased. They were perfectly cooked through to my amazement- I thought for sure the middle would be doughy. I did microwave the pepperoni on paper towels for 30 seconds to cut down on the grease and it worked perfectly. Delicious and simple! Some ate theirs plain and others dipped in Boboli pizza sauce.

Pineapple Upside-Down Cake V

Made as stated except I used a yellow butter cake mix and added more pineapple rings to cover the whole bottom of the pan. This was good but not outstanding. Maybe extra butter and brown sugar as others have stated would take this to the next level.

Glazed Apple Cookies

Used butter in place of shortening and 1/2 tsp each baking soda & powder instead of 1 tsp soda. Extra apples which I chopped in food processor and left out the walnuts. Piped the icing over top. These were cake-like and did have good flavor but just not outstanding. We did end up finishing them all which shows me that they are definitely good but with al the outstanding cookies out there I'm just not sure these are worth making again. If someone really just like apple cake-y type cookies then maybe. I added up all numbers at the end and I got a total of 44 cookies for 3 WW points each.

Avocado Salsa

Left out the olives (don't like them) and used red onion. Used Lime juice instead of lemon as I typically like lime in my guacamole better. Tis was outstanding! We had it just about 3 hours after I made it and it was good but a bit tangy from the lime. By the next day it had mellowed and flavors had blended perfectly. I added the avocado in the beginning and may do the same but if letting sitting overnight- may as well add them in them later. We had this with tortilla chips- the new artisan black bean kind is great- but this would also be really good as a burger topping or just a salad.

Baked Slow Cooker Chicken

I added carrots, onion and celery to the inside of the chicken. I lifted a bit of the skin off the top so I could season the actual meat. Used extra seasoning also- garlic, poultry seasoning etc. Poured a little chicken broth on bottom of crock pot to keep things moist. Loved this- so moist and flavorful- AND EASY!

Chocolate Cherry Cake III

This is the same recipe my mom has been using for years to make her signature Chocolate Cherry Cake! Her specific recipe calls for Betty Crocker Fudge Cake Mix but that is the only difference. I have always loved this cake- the frosting/icing really makes this a very delicious cake! Serve cold!!!

Veronica's Hot Spinach, Artichoke and Chile Dip

I had such high hopes and made this for company based on all the rave reviews. What a disappointment. I followed directions as stated except I did add 1/4 cup sour cream as others suggested. This was just not good! Maybe it was the kind of parm cheese I used? Will not try again. Sorry, really really wanted to love this.

Freezer Caramel Drizzle Pie

WOW- now this is a pie!! I used fat free sweetened cond milk and light cream cheese. Smuckers caramel- the whole jar. I used 2- 10 inch pie crusts bc it drives me nuts when I make pie and it all overflows. the 10 inch shells worked perfectly. Used sweetened coconut. I let the coconut cook a few minutes longer just to be sure the consistency would be right. This pie freezes perfectly. Doesn't really need to be set out first to cut although I think the best flavor comes when it gets a little more soft and creamy. Yum! LOVE that it makes 2 pies so you can always have one in the freezer.

Chili Rubbed Pork Tenderloin With Apricot Ginger Glaze

I cut the chili powder in half due to those in the family that do not like spicy food. I rubbed the pork, wrapped it and put it in the fridge for about 24 hours. Made the glaze the night before. Everyone really loved this! We had lots of glaze leftover so we used it to baste tuna steaks on the grill a few nights later- delicious!

Yummy Sweet Potato Casserole

Tried this as a trial for Thanksgiving and everyone loved it! I cut the sugar in the potatoes by half and will do the same again next time (used splenda). Made double the topping but didn't need it all. I put it in a smaller than 9X13 casserole. If making for more than 6 people I would definitely double the recipe for a 9X13 dish. A single recipe worth would be very thin in a 9X13. For Thanksgiving I plan to double the potatoes and topping (maybe a bit more than double the topping) and use a 9X13.
