Cranberry-Macadamia Bars

Maple Cajun Mahi Mahi

Good flavor. I baked in individual foil packets on a cookie sheet at 400 for 16 minutes Used real garlic in place of powder and cut the Cajun in half but could have gone with the full amount. Used sugar free syrup- just the right amount of sweetness.

Nutty Caramel Clusters

Definitely spray the wax paper- these stick! They were average. Easy and fun for the kids but I don't see making these again in the future. There are tastier recipes made the same way- melt chocolate and PB mix in nuts, marshmallows, MnMs etc.

Simple Roasted Butternut Squash

Better than I expected! I found already cubed squash at Costco so that helped save tons of time. Mixed all in a Ziploc bag- only 1 TB olive oil (2 would have been too much) but 3 cloves garlic. Smelled VERY garlicy while baking. I liked the flavor but the kiddos did not. I will likely make again- maybe try a cinnamon variation in place of the garlic, salt, pepper next time.

Grilled Tequila-Lime Shrimp

Outstanding. Let it marinade for about 3 hours. I sprinkled more than a pinch of the said seasonings because a pinch seemed like too little. Will def make again!

Low-Carb Chocolate Peanut Butter Smoothie

Average. The PB taste was very subtle. I prefer my shakes a bit creamier- next time I will had half a banana per serving. I did sub greek yogurt for the heavy cream and omitted the stevia as my protein powder has stevia in it already.

Bacon Avocado Salad

I've been making this all week in individual portions. Just eyeballing all ingredients- typically half an avocado (a little mashed), red onion as that is what I have, splash of rice vinegar (plain, again- what I have). I had to sub zucchini for the cucumber when I ran out, also tried basil in place of cilantro when I ran out, and added a splash of lime juice. I mix it all up and then put it on top of a plate of spinach leaves (even better to put in a bowl with tight lid and shake). Easy, healthy and delicious. I can't stop making it!!

Angel Lush with Pineapple from DOLE®

It was good for an easy, quick summer dessert but I wouldn't serve it to no guests. I used a sour cream pudding cake as the store was out of angel food cake. I think this actually made the cake better than it would have been. I used strawberries in the middle layer and on top. The pudding mixture was fine- it was just pudding mix though.

Peanut Butter Cup Brownies

How good can a peanut butter cup with a little brownie around it be??? Outstanding! I tried both the mini mini pb cups that are unwrapped in the baking section and the regular mini pb cups bc the regular ones seemed like they were so big in my mini muffin pan that there wouldn't be enough room for the brownie. However, the regular size turned out so much better. I sprayed mini paper liners with Pam, put the pb cup upside down in first then topped with batter (followed the directions on the box). Baked 325 for about 20 minutes. Don't overbake! These are so fast and easy. I topped with a dollop of rich choc frosting from this site. Store in fridge. So, so good. They do stick a bit to the paper liners - just spray well with Pam first- no biggie.

Jamie's Cranberry Spinach Salad

I roasted almonds and pecans on a sprayed cookie sheet- no butter. Olive oil instead of veg oil and cut sugar by half. This salad is outstanding! I kept the dressing separate so the salad wouldn't get soggy. Since making this for guests I now just make the dressing to keep in the fridge- I cut the sugar down to about a quarter of the original. I make individual salads and just throw on some almonds/pecans or whatever nuts I have in the house and use whatever dried fruit- raisins, cranberries, plums. I also add chopped red onion. Easy and so good.

Banana Split Bars

I did cut the sugar a bit- seemed like so much! I dipped the banana in reserved pineapple juice to prevent browning and added sliced strawberries. This was good enough to make again- a nice summer dessert. Just didn't WOW me.

Chocolate-Covered OREO Cookie Cake

Used twice as many oreos in filling- be sure to break the cookies into pieces rather than crushing in a bag so the filling stays white in color. Used chocolate brownie cake recipe from this site to doctor up the cake part- otherwise it would be pretty bland. About 30 minutes in 350 oven for 2 9 inch round cake pans. Don't overcook! The ganache was simple and delicious (I used ghiradelli choc). Because the cake was pretty thick next time I will spread the ganache as usual but then frost the entire cake with rich choc frosting from this site. Worth making again with mentioned changes- not so sure it would be all that as stated

Whipped Cream Cream Cheese Frosting

Wow. I was nervous to make this bc of the mixed reviews and bc I usually have bad luck in my attempts to make things w heavy whipping cream. I used 1 3/4 cup powdered sugar as others suggested bc I was frosting carrot cake cupcakes and I wanted to be sure the frosting would not fall flat. I put my beaters and metal bowl in the freezer for a bit and whipped the cream for several minutes to get it thick. Then I used the same beaters to whip the cream cheese mixture (room temp). Folded together and the swirls on the cupcakes held up in the fridge overnight so we're good! I doubled the recipe and did have quite a bit leftover and so glad bc it is amazing as a fruit dip for strawberries! I plan to swirl some onto each plate as the cream to accompany the caramel macchiato cheesecake I also made for Easter- fancy and delicious! Will definitely make again

Whole Grain Breakfast Cookies

Easy, soft, moist. Used low sugar craisins instead of cherries. Honey in place of the agave- will use less honey or the agave as suggested next time as too much honey gave it kind of an odd flavor. Definitely NOT diet food though- they may be 'healthy' but they are not for the calorie counter. I figured it all and 1 cookie was worth 100 calories (out of 32 cookies) Used applesauce in place of oil and peanut butter not almond

Nanaimo Bars III

I used unsweetened coconut, chopped pecans in place of the almonds and cut the sugar down a bit in the middle layer. Doubled the middle and top layer as others suggested. Beat the egg into little spoonfuls of the middle layer to avoid the curdling issue others referred to. Not the best bar ever but definitely good enough to make again! We weren't sure what to expect with these so maybe they will grow on us more and more. Can't imaginer these without doubling middle and top layer

Fried Cabbage with Bacon, Onion, and Garlic

Pretty good and will make again with the following changes- no more than 1 tsp salt and cut the pepper in half. I left the bacon out- cut calories- just sprayed the pan with Pam first. Around 8 calories in every 1 ounce.

Cauliflower Pizza Crust

I used a full head of cauliflower and just microwaved it until it was tended. Then I put it in the food processor and then to a colander in an attempt to drain excess liquid. I used a mixture of parmesan and mozzarella cheese. Doubled all ingredients bc of the full head of cabbage. Spread it on parchment paper on a large pizza pan that has holes on the bottom. I had to bake this almost twice as long! It was definitely soggy! Flavor was pretty good though as a healthy version of crust. I will try this again just bc of the health factor but, along those same lines, I will reduce the amount of cheese to cut calories a bit. I think I will up the amount of cauliflower and then squeeze as much moisture out as possible. Edit 2/14- made again, this time processed the raw cauliflower, micro for 4 minutes, cooled on tea towel then squeezed all the moisture out. Added a few seasonings- oregano and basil- baked as stated. Delicious- much better and not so soggy this way. next time I will cut down on the overall cheese just bc that adds up to a lot of calories and let's face it- if you are going to put that much cheese on then you should just eat a real pizza!

Chocolate Chip Cheesecake Brownies

Average at best. I read all the reviews and did add 1/4 cup extra sugar to the cream cheese mixture and 1/2 cup white chocolate chips in an attempt to give it more flavor as that was a common complaint in the reviews. They still turned out pretty bland. The cookie part was rather dense and it was very hard to spread a top layer as it used a TON of the batter just to cover the bottom of the pan. I ended up just placing stretched out blobs on top which was fine just time consuming. Won't make again. 3 stars - I'm being generous.

Baked Spaghetti Squash with Beef and Veggies

Kind of disappointing. It would probably be better as the recipe states- with all that cheese. I cooked it with cheese sprinkled on half so I could keep my calories low. 2 stars for me with no cheese and 3 stars from the rest of the family with the cheese.

Famous Meatballs

We thought these were just ok. I did double the sauce and could have tripled it. Used extra pineapple as it came in 20 oz cans. used the pineapple in syrup as others suggested- also I have a similar recipe that calls for the syrup kind. My mother-in-law makes similar meatballs and hers are wonderful but these were just average. In fact, a week after I cooked these for New Years they remain in the fridge untouched- unusual in this house!
