Hash Brown Casserole II

Reviewed: Apr. 12, 2012
This was just wonderful! Tastes a lot like cracker barrel's potato casserole, but I think better! Made these changes: shredded 2lbs fresh red potatoes and 1 small onion in my food processor. Added 1 1/2 cups diced leftover ham from easter, cr. of mush soup, 1/4 cup butter and 1/2 swiss and 1/2 cheddar cheeses, with a little on top at the end. I microwaved the onions in the butter for 2 minutes to get them cooking and added with the rest of the ingredients. Oh yes and omitted the salt, it has plenty with the cheese and soup. Cooked 1 hour. I also didn't use the topping but I'm sure that would be good. Will add this to the recipe box as a keeper!

Absolutely the BEST Rich and Creamy Blue Cheese Dressing Ever!

Reviewed: Mar. 4, 2012
Something was missing from this and was too runny for my taste. I mean it was good, but I'm probably trying another recipe next time. I followed it to a T and just didn't find it to be anything special.

Low Fat Buttermilk Ranch Dressing

Reviewed: Mar. 4, 2012
WOW! I have tried a few ranch dressing recipes, this was great! I did make some modifications but even at that I think it was personal preferences. I reduced buttermilk to 1 Cup. Then used 1 Tsp each of subbed dried herbs except for parsley since that's all I had on hand. Lastly I omitted the salt, I just didn't think it needed it and in general I wait til after I taste things before I add salt to anything. All in all I have to give this 5 starts even with my modifications. The ratios are great and I think given personal preference of the reduction of buttermilk it's still fabulous!

Original Homemade Italian Beef

I wanted to love this, it just was okay to me. Too Salty and fatty, not much flavor. Probably won't make again.

Best Tuna Casserole

Reviewed: Jan. 28, 2012
Delicious recipe. I love to find dinners that I almost always have the ingredients to prepare. I too like other reviewers baked in a greased 2 QT round casserole dish. I improvised with what I had which was a combo of sharp cheddar, velveeta and sliced swiss on top. I also didn't have any potato chips. I used part seasoned bread crumbs and french fried onions. Added about 1/4 cup milk and miracle whip after another reviewers suggestions. Added about 1 tsp of garlic powder. Mine wasn't dry at all but I did add milk and miracle whip so that could have helped. Overall great recipe. I did like the slight crunch of the onions and the addition of the can of mushrooms. I think it's great to find a recipe that you can modify based on what you have in your kitchen. You can't beat the price of what this dish costs to make.

Exquisite Pizza Sauce

Reviewed: Dec. 17, 2011
Sorry, this was very bitter and something not quite right. Thankfully I tasted it before I put it on the pizza. Not sure why i'm even giving it two starts. Used the Easy Pizza Sauce I recipe instead.

Chocolate Chip Banana Muffins

Reviewed: Dec. 17, 2011
Oh my goodness! DELICIOUS!!! Used 3 bananas, subbed sour cream for yogurt and added chopped walnuts! Other than those changes I followed the recipe. Both my hubby and I loved them! This is a keeper! Thank you for the recipe.

Baked Pork Chops I

Reviewed: Dec. 11, 2011
I took the advice of others and used golden mushroom soup instead of cream of mushroom. I am not a fan of mushroom soup and the golden mushroom soup gave it more of a homemade taste to the gravy. I also sauteed 1/4 cup of minced onion, 12 oz of sliced mushrooms, 3 cloves minced garlic, added double the sauce ingredients and simmered for 15 minutes before pouring over the chops. It was really delicious! The chops however were a little over done in my opinion. Next time I will make my changes and cook try less cooking time. Overall though this is going to become a regular I'm sure! We enjoyed it with mashed potatoes, roasted green beans and hawaiian rolls! Wonderful Sunday meal!
