Hash Brown Casserole II
This was just wonderful! Tastes a lot like cracker barrel's potato casserole, but I think better! Made these changes: shredded 2lbs fresh red potatoes and 1 small onion in my food processor. Added 1 1/2 cups diced leftover ham from easter, cr. of mush soup, 1/4 cup butter and 1/2 swiss and 1/2 cheddar cheeses, with a little on top at the end. I microwaved the onions in the butter for 2 minutes to get them cooking and added with the rest of the ingredients. Oh yes and omitted the salt, it has plenty with the cheese and soup. Cooked 1 hour. I also didn't use the topping but I'm sure that would be good. Will add this to the recipe box as a keeper!

Absolutely the BEST Rich and Creamy Blue Cheese Dressing Ever!
Something was missing from this and was too runny for my taste. I mean it was good, but I'm probably trying another recipe next time. I followed it to a T and just didn't find it to be anything special.

Low Fat Buttermilk Ranch Dressing
WOW! I have tried a few ranch dressing recipes, this was great! I did make some modifications but even at that I think it was personal preferences. I reduced buttermilk to 1 Cup. Then used 1 Tsp each of subbed dried herbs except for parsley since that's all I had on hand. Lastly I omitted the salt, I just didn't think it needed it and in general I wait til after I taste things before I add salt to anything. All in all I have to give this 5 starts even with my modifications. The ratios are great and I think given personal preference of the reduction of buttermilk it's still fabulous!
