Refried Beans Without the Refry

This has got to be the smartest refried bean recipe ever! I make this to go with chicken enchiladas and end up with enough leftovers to use for tacos later.

Cranberry Pork Roast

This was wonderful! I didn't have time to make it a crockpot meal, so I mixed up the sauce (I used whole berry) and other ingredients and poured it over the roast and some cut up squash in a roasting pan. I baked it uncovered in the oven at 325 for 1.5 hours and it came out perfectly!!

Jacob's Coat Casserole

Wow! Was that ever good! I used 16oz of frozen mixed veggies and grated cheddar cheese (saving a handful to put on the potatoes for visual appeal) and it came out great! This is a great alternative for those who are not huge fans of the condensed soup version. I added some spices for extra flavor and it was fantastic!! Thanks!

Pecan Pie Bars I

Colleen's Slow Cooker Jambalaya

This was fabulous! I am always looking for recipes where I can use frozen meat instead of having to remember to thaw things out. :) The only changes I made were to omit the shrimp (I didn't have any handy), and I put about 4-5 frozen, boneless, skinless chicken thighs on the top of the rest of the ingredients. I also took the lid off for about an hour to let things thicken up a bit. All my family could say was YUMMM!!

Quick Texas Stew

This was a fast and friendly recipe for sure! With some cooked ground beef it becomes a meal using all canned goods, a perfect 20-minute dinner. I added tomato soup instead of minestrone and added a can of kidney beans as well to stretch it a little further. Delicious!!
