Apple Walnut Bread

This is awesome! I reversed the amounts of oil and applesauce, and used homemade applesauce. It was very moist and delicious! I made a double batch, so I added some dried cranberries and made muffins with the extra batter.

Per every 4 apples I added one large spoonful of honey, and did not use sugar. I used empire apples. This was very good and not too sweet. I made a quadruple batch and froze in freezer jars. Excellent!

Cowboy Potatoes

this is a popular dish where I live. Super easy to make. I just mix everything right in the baking dish, so I dont dirty any extra dishes. The amount of cheese used can be adjusted to your likeness. I usually use less than 2 cups, and it is still cheesey.

Olive Puffs

this was a fun and easy snack to make, even for my 4 year old. We used large green olives and kalamata's. Some of the kalamata's popped out of the pastry as it puffed up. Next time I will show my child to mold the dough inward around the olive just a bit to avoid that. Also I baked them a bit too long and the pastry was a little crispy. Otherwise a good snack.

Broccoli Casserole

This was good. I added chopped mushrooms, and sauted with the onion. Also replaced the mayo with soft tofu. My 4 year old really liked it!

Vegetarian Sweet and Sour Meatballs

I didnt think this sounded good based on the ingredients, but the reviews were great, so I thought I would try it. This is the best food EVER! Great comfort food! I replace the cottage cheese w/ tofu. It makes the mixture less bumpy and less sticky when forming the balls. I also use basil instead of orgeno. GREAT RECIPE!

Cranberry Banana Oat Bread

This is good. I used wheat flour, 1/3 cup of applesauce instead of butter, brown sugar and 2 small-medium bananas. I made muffins, and they turned out very heavy and dense. The addition of cranberries made it the perfect sweetness. I would have given it 4 stars if it wasnt so dense.

Pumpkin Spice Cookie

These have been great both times I made them! I made them for a holiday party and received many compliments. I followed the recipe exactly, except I took some others suggestions and added cream cheese frosting. The cookie is very dense, but delicious. I made them a second time, but added 1 cup of oatmeal and some cinnamon, again adding cream cheese frosting. They were even better with oatmeal, as they were less dense.

Edible Spiders

I used the pretzels for the legs and it was delicious! I only gave it 2 stars because it was really cumbersome to make. I used medium sized marshmallows, and ran out of room in the middle after squishing it to insert the legs. Covering it with chocolate proved to be difficult as well because it was hard to cover the entire spider, and then I had to make sure there was not chocolate between the legs so you could tell they were legs. It may have been easier with large marshmallows, and may get easier with practice, but I do not have the time or patience to make several spiders as I had intended. It took me 15 minutes to make 3 spiders.

Magic Wands

This is a great recipe. I've made these before, but never thought of them as 'magic wands'. I made them for my kids to share at school for Halloween and have made them for birthday parties. They are a big hit with kids! Its very versatile, as you can cover them with any sprinkles or sugar crystals or crushed candy, coconut, chocolate chips, etc. Super easy to make too!

Delicious, fluffy, nutrtious pancakes that my children and I loved! Thank you! I omitted the oil, and used 1/2 cup of applesauce and used whole wheat flour instead of all purpose flour.

Vegan Agave Cornbread Muffins

These is the best cornbread ever!! I cant eat it without mmmm'ing and awwww'ing! I used regular whole wheat flour insted of pastry flour. I replaced the oil with more applesauce and used honey instead of agave nectar. I froze the muffins so I can take one at a time for my lunch.
