Banana Cake VI

After seeing all the reviews, had to make and chime in. I made the recipe with no changes, so it's fair. It's moist, easy to make, and tasty. BUT I think that it's a little on the heavy side, like a bread. The frosting was good, the cream cheese taste was a bit strong for the banana cake, so I added in more powdered sugar to the remainder of the frosting. As far as the cake, i'd probably keep the recipe, but still am searching for one that is a bit less dense. I didn't think it was too sweet as some had mentioned. I'm not sure if sticking it in the freezer does anything for the cake if you are going to eat it within a couple of days or that day anyways. All it does is bring your freezer temp down and defrosts some items. It didn't cool the entire cake either. I did have to bake mine for 1 hour and 25 minutes at 275 degrees. I don't live in high altitude, and I do have an oven thermometer.

Clone of a Cinnabon

So many ratings, so i'll keep it short. The only reason why I gave this 4 and not 5 was because to me, it needed more cinnamon goo center! After baking, the inside carmelized up a bit and with Cinnabons, they don't harden up. If there was a way that they could keep soft after a day, that would be great! Flavor of the inside was perfect and this recipe is so easy. I had wanted to make cinnamon rolls for awhile, but was concerned about how difficult they were, with this recipe, it was simple!

Crostini

Loved this recipe! Definitely a keeper. For color, I added a dash of paprika, but kept everything else the same. I ran out of cheese in between, but I had a large loaf of bread. This tasted just like the crostini served at Nordstrom, and this is exactaly what I was looking for! Some say that it was greasy, but if you broil it on a broiler grill, some of the oil comes out of it. It crisps up after taking out of the broiler as well. Decadent and savory!

Chicken Marsala

Yum! I am usually pretty picky and give 5 stars on only a few recipes, but this one got 5 for being so tasty, easy and quick! I only added a sliced onion to the mushrooms since I had so many on hand. I wouldn't change a thing to the recipe, ingredient-wise. My husband loved it too-- I made it with chicken tenderloins from Costco, so the pieces were a bit smaller and I didn't pound them. I liked that the thickening comes from the flour on the chicken vs. making a roux and then adding the sherry/marsala then adding the chicken. Definitely a keeper!

It's Chili by George!!

Great basic recipe with items you can find in your pantry. I thought that the chili was better the next day, after the flavor melded in and it thickened up a bit. The only addition I would suggest is to thicken up the chili with a flour/water mixture and simmer in at the end. The flavors were really good!

German Red Cabbage

So yummy and easy to make! I didn't have cheesecloth, so I just put the spices directly in the pot. My 9 year old daughter loved it! This recipe can probably be made without the thickener (cornstarch/water) at the end, it got a bit thick, but it all depends on how you like your cabbage. This tastes just like a German deli's salad that is near our house. Oh, and my German hubby says that this is just like his grandmother's.

Smoked Turkey Wild Rice Soup

This recipe is really easy to follow, with alot of ingredients that are on hand. I used the carcass of my smoked turkey from Thanksgiving- flavor was really good! The only thing is that I was hoping with the amount of half and half, that the soup would be a bit creamier/thicker, maybe more like a chowder. I used a flour/water thickener, which was okay, but found that after cooling in the fridge, the soup turned too thick, into a gel. Upon heating on the stove, the soup thinned out back to where it was. I will be posting a photo soon as well. If you want a thick soup, this is not it, but it's a thin creamy/brothy soup with alot of flavor!

Baked Asparagus with Balsamic Butter Sauce

Curry Kabobs

This was an absolute easy and delicious marinade on the fly for me! I let the meat marinade for a couple of hours and then skewered the meat. YUM! The sauce was a bit thick, so there was no need to discard the marinade, and I used chicken thigh meat. My guests commented how moist and tasty the meat was, and they weren't curry fans! I did double the curry as others mentioned, so I used 1 t. curry, and kept the other ingredients the same. Did 1/2 of the kabobs in the broiler and the other 1/2 on the charcoal grill. Both were excellent!

Easy Broccoli Quiche

I'm rating this based on the actual recipe, with only one change-- adding 1t. of flour to the milk mixture. The flour helped to bind it a bit-- i'm thinking it's more of a 3 1/2-4 stars. Needed some extra seasonings after it was cooked, but everyone in my house liked it, and it was good. I didn't have a problem with the mixture not fitting into the pie crust, however, i did fill it to the top, and it didn't overflow. It was to the TOP. Baked for the recommended time and it came out great. There was a bit of liquid at the bottom of the piepan when I cut it though, and I even thought I cooked the broccoli and onions well-- The bottom crust either didn't cook right or it was just too thin (Pillsbury deep dish)- but It was hard for me to find my crust! Other than that-- my husband who "Isn't into quiche" at two pieces and my daughter ate 3 pieces over two days as well. I'll probably make it again.

Honey Cornbread

This cornbread was nicely sweetened but for me, a bit too crumbly. I like the cake-y type of cornbread like at Marie Callender's or Claim Jumper restaurants. I made these in cupcake tins, doubled the recipe- they didn't rise much, but I also put some in mini-muffin pans and they rose nicely. I don't know if it was the cupcake liner that had something to do with it. I'm still on the search I think! Good and easy recipe in a pinch though.

Lemon Sauce for Salmon Patties

I made this recipe to go with my salmon patties, i'm happy that it was just a little something to top them! This is really quick and easy to make- the only thing is that I thought the color was a bit funky, a little see through and a little opaque at the same time. I could see using this as a base and adding more flavor to it: Dill, parsley or something to liven it up a bit. I did like it though, thank you for sharing!

Speedy Salmon Patties

Yummy and very easy to make! My 7 year old daughter pretty much made them herself with some help from me. To top that, she doesn't like fresh salmon for some reason- but she loved these salmon patties! Good go to recipe when you're short on time. The taste was good too.

World's Best Lasagna

Pretty much the best lasagne recipe i've tried! This has alot of ingredients, but really, is pretty simple to make. Just make sure you have all your ingredients ready (mis en place) and you're good to go. I did everything exactly as the recipe goes, and it literally flew out of the pan! The layering was a bit tricky- I used the 9x13" pan, but had 3 remaining noodles and alot of sauce so I just did an extra layer without the ricotta mixture. This didn't really need my 2 cents, as it's already rated by alot of people, but I thought i'd share, thank you so much for this keeper recipe! :)

Spinach and Artichoke Dip

2 stars because it was easy, but this dip has no flavor at all. I don't think that anyone ate it- I ended up dumping all of it. I think that there were too many artichokes in it, not enough mayo. Maybe it would work by doubling the mayonnaise and adding a bunch of seasonings, but for me, it was really missing something.

Tiramisu II

So easy and so yummy! I only rated this as a 4 star since I think that the recipe should double the amount of coffee/rum mixture. Try using an Americano coffee w/ extra espresso, yummy and tasty. I've also tried using the harder Italian ladyfingers, and these don't work out as well. They don't absorb the coffee and they are crunchy. You need to find the ladyfingers that are more cakey and yellow. I could only find them at our local Albertson's. That might not be the 'traditional' type, but in the picture, that is what is used and trust me, the harder ones will NOT absorb the liquid, you'll have a mess. As far as the recipe goes, it's yummy and decadent. I love that the yolks are cooked into a custard too.

Popovers

So easy to make, and so yummy! I always thought that you needed fat drippings to make a good popover, but with this recipe, it makes a great batter for an easy addition to a meal. Make sure you give yourself ample time for the baking. I doubled the recipe since I needed more than 6, but found out that this recipe is probably for a larger pan- I have a cupcake sized popover pan, and doubling made about 18 popovers. They all went though, everyone loved them and asked for more!

Spaghetti with Tomato and Sausage Sauce

I followed the recipe except used ground beef vs. beef sausage, since i'm not familiar w/ beef sausage. (Kielbasa? um. not... i'm thinking Italian sausage, but that isn't beef...) Anyways... the sauce came out so watery- and yes, I did cook it and cook it. Too much spices too, since I used dried spices, it was just overpowering 7 1/2 Tablespoons of dried spices total? The wine did lend itself to a good addition to the sauce, and I cooked and cooked it down in a slow cooker for 5 hours, finally took the lid off at 5 hour mark, turned it to high for an additional 2 and then finally thickened the sauce w/ flour and water. The taste is good, but not amazing. I also added in an extra can of tomato paste.

Chicken In Sour Cream

I must be missing something, but I followed the recipe to a T and it just didn't do anything for me. I like salty food, so the salt content didn't bother me much, but I thought that the recipe tasted too much like the onion soup and it just didn't spread much for the gravy. Just blah. My daughter didn't care for the chicken much either.

The Best Rolled Sugar Cookies

I thought that these cookies were too wet when I made the batter, so I added more flour- they came out okay, I thought they needed more sugar in the end though. I thought as well, that they spread too much during baking- was it that they were a wet dough? I am looking for a cookie that holds up, doesn't spread out much and has a good flavor. I think i'm still on the hunt for the best rolled cookie. It's good, but not the best. I think that the pictures that people posted look so cute though- those didn't look too spread out.
