Oven Fried Chicken III

i thought this recipe was GREAT! i took a tip from Bobby Flay and marinated my chicken in buttermilk for no less than 4 hours (it helps the chicken stay tender and juicy). i read some reviews and instead of 1C. of mayo, i added a half cup of milk, some sour cream, mayo and ranch dressing. i also added some poultry seasoning to the bread crumb and panko mix i used for the crust. i also put a little cayenne for a little bite. i used chicken tenders b/c i dont eat meat off bones. i cooked it at 450 for 15min and turned the strips and then cooked it for another 10min. my boyfriend loved it too. this is deffently a keeper. i never would have thought to use mayo for fried chicken!!

Chicken Scampi II

this was just okay for me. my boyfriend said that he wouldnt mind this again but i could tell it wasnt his favorite. i read a lot of reviews and decided to only add 1/4 cup butter. i also added more lemon and i still thought it could use more. i did like the garlic and i added more like a lot of reviewers said. when i put the chicken in, i added about 1/2 cup of white wine (without that it would have been WAY too greasy!). i also cooked some pasta because i thought rice wouldnt fit with the taste. after it was cooked, i still thought it was too greasy and there seemed to be something missing. the taste was very mild and nothing really poped! i dont think i will make this agian

BBQ Chicken Pizza

i thought this was a great base recipe. ive never had the pepperoncinis on the pizza and i thought it could be good but my boyfriend said no! so next time i will try them on the side. i read most reviews and it said that a cup of sauce was too much, so i tried 3/4 C. and both me and my boyfriend thought it was too dry. i also thought 2 breasts was too much chicken. we are having it for dinner this week and i will try just 1 large chicken breast. i liked a little more cilantro. the best part of the pizza though was when i sliced the red onion VERY thing and let the ends get a little burned. it gave the pizza a great smokiness... wonderful! experiment and have fun with this one!!

Filipino Lumpia

i have grown up eating lumpia my whole life. i grew up in California and had a lot of Fillipino influences around me. we have a variety of sauces we use in my family. plum sauce is what i grew up with and still crave it every once and a while to this day. we also get a sweet chili sauce. you can find this in asian markets. its bright orange with little red flakes in the sauce. thats my familys favorite. my mom makes a sauce that is MY favorite with 1 cup white vinegar (or you can use rice vinegar for a more mild taste) 1 tablespoon minced garlic and black pepper. sounds odd but its just amazing! my boyfriend likes sweet and sour sauce on his (he prefers the ones that are more red than orange). i hope that helps with your dipping needs!!

Baked Coconut Shrimp

my boyfriend loves red lobsters coconut shrimp so i decided to make this recipe especially since it was baked. i read every review and decided to pulsate the coconut flakes in a food processor so they were a little bit more manageable. wasnt expecting it to be as easy as it was to make so that was a definite plus! wasnt happy when i went to turn over the shrimp that the breading started to come off. i think next time i will either spray the cookie sheet with a lot more oil or use SilPat. i will also bump the heat down to 350 degrees because i noticed that my coconut was kind of burning. but its well worth trying again.

Chicken Tortilla Soup I

so far i have only made this once but i read almost every review (like i always do) so i could get some hints to make this great. i added cumin but still kept the oregano (i didnt think it was too much). didnt add hominy but i will next time just to see what it adds since i love it. i added a couple more cups of chicken broth because i like my soup thinner. i didnt add crushed tortilla chips because that would have just made the soup thick but served the baked Tositos Scoops instead of using a spoon. it was GREAT! i chopped up some jalepenos to garnish along with adding sour cream, lime wedges and more cilantro. i may have changed a lot but this was an amazing soup. i looove All Recipes!!!

Slow Cooker Salisbury Steak

i absolutely LOVE this recipe. i have made this about 6 times now. salisbury steak is one of my favorite meals in the world and this always hits the spot. i never make a recipe word for word and this time was no different! i live in OK and never have found an au jus mix so i just get about 4 beef bullion cubes and heat that up with the water, until the bullion has disolved and i also add A LOT of worcestershire sauce (thats the one thing this recipe is lacking!). i also switch the cream of chicken soup to cream of mushroom soup. if i remember i try and add a small can of mushrooms. this time i added 1/2 of an onion and it was great. this serves 8? man i could eat this whole meal by myself!! ha
