i love to cook. i have been cooking since before i can remember. my mom use to have me make dinner at least once a week when i was in elementry school and up. i very rarely use recipes and if i have one, i NEVER do word for word. i love to add my flare to it. i like things that are simple to make yet exciting to taste!
My favorite things to cook
mexican! my boyfriend and i cant get enough mexican in our diet. i also like to make things that dont taste like they are good for you but are. it makes me happy to know my boyfriend goes in for 2nds and its good for him!
My favorite family cooking traditions
i have a recipe for salsa that i made up a few years ago and now i cant go anywhere without it. if i dont bring it to a family function, they would rather see my salsa than me! ha ha
My cooking triumphs
every night is a triumph! i dont get much help from my boyfriend when it comes to figuring out whats for dinner. if hes got food on his plate at 7:30pm then im pretty stoked!
My cooking tragedies
crockpot recipes! supposidly these are suppose to be the easiest BUT i always seem to mess up something. i love my crockpot because i can just set it and forget it. but those tend to be my worst recipes made. except for the salisbury steak in the crock pot. BEST EVER!!!

Oven Fried Chicken III
i thought this recipe was GREAT! i took a tip from Bobby Flay and marinated my chicken in buttermilk for no less than 4 hours (it helps the chicken stay tender and juicy). i read some reviews and instead of 1C. of mayo, i added a half cup of milk, some sour cream, mayo and ranch dressing. i also added some poultry seasoning to the bread crumb and panko mix i used for the crust. i also put a little cayenne for a little bite. i used chicken tenders b/c i dont eat meat off bones. i cooked it at 450 for 15min and turned the strips and then cooked it for another 10min. my boyfriend loved it too. this is deffently a keeper. i never would have thought to use mayo for fried chicken!!

Chicken Scampi II
this was just okay for me. my boyfriend said that he wouldnt mind this again but i could tell it wasnt his favorite. i read a lot of reviews and decided to only add 1/4 cup butter. i also added more lemon and i still thought it could use more. i did like the garlic and i added more like a lot of reviewers said. when i put the chicken in, i added about 1/2 cup of white wine (without that it would have been WAY too greasy!). i also cooked some pasta because i thought rice wouldnt fit with the taste. after it was cooked, i still thought it was too greasy and there seemed to be something missing. the taste was very mild and nothing really poped! i dont think i will make this agian

BBQ Chicken Pizza
i thought this was a great base recipe. ive never had the pepperoncinis on the pizza and i thought it could be good but my boyfriend said no! so next time i will try them on the side. i read most reviews and it said that a cup of sauce was too much, so i tried 3/4 C. and both me and my boyfriend thought it was too dry. i also thought 2 breasts was too much chicken. we are having it for dinner this week and i will try just 1 large chicken breast. i liked a little more cilantro. the best part of the pizza though was when i sliced the red onion VERY thing and let the ends get a little burned. it gave the pizza a great smokiness... wonderful! experiment and have fun with this one!!
