Fluffy Pancakes

Great base recipe, but I added 3 tbsp brown sugar, 1 tsp vanilla, subbed coconut oil for butter. Added fresh blueberries and they were crazy good.

Banana Muffins II

Came out GREAT though I did make a few tiny changes. Used gluten-free flour, substituted coconut oil instead of butter, added 1/3 cup plain yogurt and only used 2 bananas instead of 3. Had no baking powder so I skipped it. Added some cocoa powder too. FANTASTIC!

Baked Macaroni and Cheese I

Made it with gluten-free penne and subbed a can of evaporated milk because I was out of milk. Topped with double the amount of bacon. Very tasty - a more "grown up" mac n cheese. My kids like mac n cheese plain but I enjoyed this recipe. Make sure to add plenty of salt and pepper to season the sauce well and a 1/2 tsp of garlic powder is a good addition to consider.

Best Peanut Butter Cookies Ever

Good recipe, but it doesn't need the baking soda. I used coconut sugar and honey instead of the white sugar. They were perfect after 8 minutes in the oven.

Baked Oatmeal Squares

I loved this recipe! Like many others, I used applesauce instead of oil, and I upped the oats to 1 and 3/4 cups, used 1/2 cup plus an extra splash of rice milk instead of dairy milk, coconut sugar (tastes like brown sugar), roasted almonds and upped the cinnamon to about 1tsp. Instead of an egg I used 1 tbsp flaxseed meal soaked in 3 tbsp water. Once baked I let the bars cool in the baking pan for 10 minutes, then flipped out the bars onto a cooling rack and covered them with a melted milk chocolate Ritters bar. I sprinkled them with chopped almonds and walnuts, coconut flakes, a sprinkle of sea salt and a sprinkle of course 'glitter' sugar that I usually use on cupcakes. Then I let them cool in the fridge. The result - AMAZING!!!! I found that they held together perfectly as bars and the taste was crazy good.
