Baked Cod

Yum! This was very good! I made it as directed except I used ceaser salad croutons b/c that's what I had on hand and left out the parsley (had none). I also poured a tiny bit of Olive Oil over the fish instead of using butter spray and then cooked them for 15 minutes, broiled for 2 or 3 more. All 3 of my little kids ate it up (my daughter had 3 helpings and she does not like fish!). Tip- I lined the pan with parchment paper- no clean up after!

Cheddar Bacon Hamburgers

I made these yesterday to bbq for my kids. Instead of making 4 large patties I made 8 baby ones and served them on little buns. I didn't put in horseradish since the kids don't like it and I added an egg to help hold them together. I also put in more cheese then stated b/c I shredded too much! My kids loved them! Definately a must make again!

Zucchini Raspberry Cupcakes

Just made a batch of these to serve to hungry kids after swimming lessons tomorrow and they are SOOOOO good! I increased the amount of cocoa to almost 1/2 a cup and the amount of raspberries to almost 2 cups (so there would be berries in each one). I think there could have been less chocolate chips...3/4 a cup would have been plenty with everything else going on. You can not taste the zuchinni at all but they are super moist. I'm sure they would be great with some frosting or whipped cream but they are really more like a muffin than a cupcake and are excellent with no topping at all!

Strawberry Freezer Jam

I agree with others when they say way too much sugar! I use 4 cups of strawberries, 1 1/2 cups of sugar and 1 package of Certo Pectin. No added water. It sets perfectly and has a nice fruity taste especially if you're using fresh picked berries!

Chicken Puffs

This was delicious! I made it only for myself and my 3 kids so I used only 1 chicken breast, cooked it in some butter with 1/2 tsp of garlic. Then once cooked mixed it with about 1/4 of an 8oz container of cream cheese and spread it over 4 crescents rectangles (1 can). All 3 of my kids (5, 3 and 1 1/2) ate it up super quick and asked for seconds. Just as well we ate it all b/c it would not have tasted the same re-heated but I do wonder about freezing the pre-made puffs?
