Spicy Indian Chicken and Mango Curry

Very very good! Something unique and delicious. I added coconut flakes like others suggested and extra spices (garlic, onion powder, turmeric, cumin, ginger, and cinnamon). My husband asked that we make it again frequently. We agreed it was like something you would go to a restaurant for because of the uniqueness and the great flavor.

Easy OREO Truffles

Pretty good, and not too hard to make. We chilled the mixture for several hours so it was a little easier to work with. Dipped in white and milk chocolate.

Blueberry Raspberry Pie

Very tasty pie. Love it! I added quite a bit more cornstarch after reading some reviews just in case because I hate it when my pies turn out runny and it set up great! I could cut it without it running all over the place. It is sweet and very flavorful. Definitely will use this berry pie recipe again.

Honey Roasted Red Potatoes

Pretty dang good. I would definitely double the sauce mixture next time. And make sure you mix it a few times during cooking. Also someone's suggestion of broiling them for a few minutes at the end gives the potatoes a great texture. Delicious.

Broccoli with Garlic Butter and Cashews

So good and really simple. I don't think we will make broccoli any other way! I also have made the sauce with brussel sprouts which everybody besides my husband normally hates. The brussel sprouts were gobbled up faster than any other part of the meal. My four year old even loved them and has asked for them again. I add in a little extra brown sugar.

Spicy Honey-Mustard Chicken Stir-Fry

Very tasty. The only thing is it is more of a peanut sauce than honey mustard. Still very good, but a little deceiving. I love the peanut buttery taste, but may try lessening the peanut butter amount to tste more of the other flavors next time.

Fudge

Really easy. I mean REALLY easy. I have made it multiple times with multiple different flavors. Added orange extract to the chocolate. Used peanut butter chips, butterscotch chips, and white chocolate chips. Add-ins - peppermint with candy cane chunks, crushed oreos, almonds with almond extract, heath bits, and we did one where we poured half the mixture then a layer of roasted almonds, melted caramel, and the last layer of the fudge. Very good fudge. I always do one and a half packages of chips though. One package is not firm enough. Line your dish with aluminum foil and spray it. Pops out easy to cut. A friend begged me, asking what he could do to get more fudge he loved it so much.

Key Lime Pie I

Everybody loved this pie. Out of the eight pies I made this one definitely went the fastest. Super easy, too. I've tried key lime before and have a hard time having them set up, but this one was perfectly firm. Yummy!

Spinach Salad with Pistachio Chicken

It was good, but neither my husband or I could really taste the pistachio on the chicken. I think if I repeated this one I would use any old nut that was cheaper. You could even just use bread crumbs, because it didn't taste too different from bread crumbs. I also would use a lot less olive oil, maybe half. The chicken was kinda oily, which, when you're trying to make a healthy spinach salad, is not too satisfying.

Cream Cheese Pound Cake III

This sucker probably puts on a lot of pounds, but the taste and texture is amazing and worth ever pound. So good. I substituted the vanilla for almond extract. Delicious!

Fierro Chicken

We really liked this one. It was super easy and delicious. My husband said it was restaurant quality. I actually didn't have half and half on hand, so I substituted for whole milk and just didn't put as much in to try to keep the texture, and it was still amazing. We cut it up and put it on rice like one reviewer suggested, and it was a great way to use all the yummy sauce.

Jalapeno Popper Grilled Cheese Sandwich

Simple, yet sooo good! If you like jalapeno poppers, you will love this. I like to dip my poppers in ranch, so I substitute ranch dressing for the sour cream, but it is good as is. Easiest meal (that actually tastes super good) ever.
