Mississippi Mud Cookies

Just made these - Few things that I changed: Added 1/2c more walnuts, 1/2c more coconut flakes, and a tsp of cayenne pepper. Ended up like a mexican chocolate bar with oats. Very good. Will definitely make these again.

Purple Plum Pie

This pie was delicious! We had a bag full of plums to use that were starting to go bad, and this was the fix. I didn't measure out the plums exactly and it wasn't a problem. I doubled the recipe and the proportions worked out great, no extra or short for two pies. One of the roomies is vegan, this was super simple to "veganize" for her. The pre-made shells were already vegan, so I just left the topping off one pie. The topping is definitely delicious, so if you're not vegan, don't skip it over!

Sausage Gravy III

Someone gave me 5lbs of ground sausage that I had no idea what to do with. This recipe has taken care of a great portion of it! My roommates love it, and it's so simple. I'd never made a gravy before, but it turned out perfect the first time. Thank you!

Raspberry Cheesecake Stuffed French Toast

This was a huge hit for me on Valentine's Day. I didn't have raspberry puree so I did use fresh raspberries instead. I mashed them up quite a bit on put them on the skillet with some brown sugar. Then I mixed them into the filling. I also used some heavy cream with the milk because I like the thick and fatty stuff :) Very nice recipe, and the partner gave rave reviews.

Sausage Gravy I

This recipe was pretty easy, it was the first time I'd ever made gravy and it turned out pretty perfect. The only problem was that I had to spice it up because it was a little bland. However, it gave me a great base recipe for my first time.

Creamy Spinach Tortellini

The only reason I'm not giving this recipe 5 stars is because i didn't use the tortellini. I was going on the cheap side and just used some penne I already had. Delicious though! I substituted the mushroom for marinated artichoke hearts (not much of a mushroom lover) and it turned out fantastic. Thanks for the recipe!

Eggplant Parmesan

This recipe was fantastic! My other half was confident that no one could make decent eggplant. I didn't trust just tomatoes because they can be pretty icky this time of year. I bought a bag of cherry tomatoes and quartered them, and added some tomato paste. Turned out fantastic! It wasn't as solid because of the paste, so I toasted some italian bread for the side. We piled it on top and it worked out great. I also served this on top of a bed of spinach (for the same reason). Either method worked. Needless to say, he is very convinced that I make the best eggplant in existence.

Basil Tomato Soup

This soup was fantastic, although i did make a few changes.. I kept the amount of sugar, whipping cream and butter the same because I intended to stay as true to the recipe as I could. I did not find it too buttery, but maybe a bit to sweet (I would suggest adding carefully and checking until its just enough to counter the acidity.. I know it lists one tsp, but nonetheless). I added basic salt & pepper, oregano and parsley as well as some fresh crushed garlic. I felt it was a little plain without that. I also added about a 1/2c mozzarella and topped with croutons. My roommate hates tomato soup and she ate two bowls of it. It wasn't super-tomatoey but very creamy. Five stars b/c although it was sweet, it made someone like tomato soup. Plus, I can be a little sweet-sensitive. I will make again!

Best Spinach Dip Ever

This is a fabulous dip and I have brought it to several parties. ENDLESS RAVES!!! My roommate isn't a huge fan of water chestnuts so I left them out. I replaced them with marinated artichokes and green onions. I also add a few cheeses (1 cup shredded parm). I was worried on Thanksgiving because the store was completely out of dry leek soup mix (really does make it) so I used onion instead. Mixed with the green onions I had put in, it was somewhat overwhelming. However, I chilled it overnight and by the morning that was no longer the case. It was spot on.

Pasta Carbonara

Super easy to make and you almost have everything you need at any time. I whipped this up and was amazed at how delicious it was. It's not a traditional carbonara, but it tasted great and was so simple. You can spice this up with anything from chicken to sun-dried tomatoes, pesto or some veggies.

Homemade Mac and Cheese

I followed this recipe to the t and I'm not exactly sure what happened, but it did not turn out well. Once the dish cools down a bit, it really goes downhill. It wasn't very creamy and the texture just felt off. I won't ever make it again, it sat in my fridge and nobody would eat it. A complete waste of a lot of food.

Toasted Almond Party Spread

This spread is fabulous!! I brought it to a potluck and popped it in the oven there. It went over ridiculously well. Really nice for a fall night. I did add cooked bacon (had some in the fridge that I needed something to do with) and I thought it was a very nice touch. I also added more cheese cause I'm a cheese freak. Served it with ritz whole wheat crackers and was asked for the recipe 7 or 8 times. Thank you!
