Neat Sloppy Joes

I’ve made this recipe for years. Here are some tried and tested suggestions. First, make sure your beef is extra lean. After browning the beef, remove the beef from the pot and drain the excess grease. Second, Campbell’s Tomato Soup is much better in this recipe than using tomato sauce. However, check the sodium on the can (480 mg) - you won’t need to add any salt to this recipe. Thirdly, if you use Heinz ketchup, you don’t need to add vinegar. Heinz has more vinegar than Hunts Ketchup. Lastly, I happen to like chopped celery in this recipe. It adds an extra layer of flavor. You can always whirl it in a processor if you don’t want chopped pieces. And, if you don’t like sweet flavors, just cut back on the sugar. My family and friends love this recipe. It's a keeper!

Sour Cream Chicken Quiche

For vegetarians (who won't eat poultry), I've made a similar Sour Cream TUNA Quiche for years with a couple of variations. Instead of chicken, use 9 oz. canned tuna, drained and flaked, 1/2 cup milk, 1/2 cup sour cream, no flour, no nutmeg and no green pepper. Use 1/2 cup sharp Cheddar cheese, 1/2 cup Mozz. cheese (instead of Swiss), 1/4 t salt, 1/4 t pepper. Into this mixture, stir 1/2 of a 6 oz can (3 oz) French fried onions (instead of using chopped onion). Sprinkle the remaining canned fried onions on top of the quiche before baking. Preheat oven to 400 degrees and pour ingredients into an unbaked 9" deep pie shell. Place in oven and immediately reduce the temperature to 300 degrees. Bake 1 hour. A family and potluck favorite!

Fudge Pie

Love the taste, however the filling fell as it cooled!! Made two pies and they both fell. I could not serve the pies this way to company and since I was having a guest who cannot have dairy such as Cool Whip, I went to the store and bought Rich's Non Dairy Whipped Topping (defrosted and whipped the topping) and spread it on the "sunken" pies. Added fresh raspberries to the topping and received oo's and ah's. Next time, I will double the filling recipe as suggested. By the way, I froze the left-overs even with the topping.

Mint Chocolate Chip Cookies

Here's an easier & less expensive twist. Begin with the Betty Crocker Chocolate Chip cookie mix (extra chips already in the mix). Instead of buying 1 bag of creme de menthe chips AND 1 bag of chunks, buy 1 bag of Nestle's Dark Chocolate & Mint Morsels and use approximately 1/2 of the chips. It's healthier if you don't use the food color & less expensive - unless you already have it. I admit the cookies in green are more festive looking. I added a little more mint extract. The cookies were amazingly delicious (just not green)!
