Authentic Mexican Breakfast Tacos

Excellent. So good I had it 3 or 4 times in one week. Even better to saute peppers and onions before adding the eggs. Also made once with colby jack cheese and it was great too. Good with or without hot sauce. I recommend making sure you use corn tortillas, not flour, as the texture and flavor make this dish better.

Potato Cheese Soup

I don't even like Swiss cheese but this soup was awesome! Put 1/2 tsp pepper after reading some of the other reviews. Added some frozen broccoli. Served it with Italian bread and butter. Yummy and very filling!

Kettle Corn

I loved this popcorn! I was a little skeptical at first but it turned out great. It tastes just like the kettle corn I've had at fairs, especially when I added a little salt after the popcorn popped. I can't wait to make it again! It's so much better than that new microwave kettle corn!

Salsa Chicken

This was so easy, so quick, so juicy, so tender, and so flavorful! I loved it! I used hot taco seasoning and kind of rubbed it on the chicken. I used Tostitos Salsa (medium) and Kraft Mexican shredded cheese (Four Cheese). I couldn't believe how juicy it was! I served it with corn and mashed potatoes. I can't wait to have it again!

Cajun Chicken Pasta

This was excellent. I used the cajon seasoning recipe from Emeril's website. I used 1% milk thickened with corn starch instead of heavy cream and it turned out great. Will definitely make this again.

Hobart's Chicken and Red Bean Soup

This recipe is excellent. It was so quick and easy. I loved the cajun spices. It tastes great with parmesan cheese sprinkled on top. Great with grilled cheese sandwiches.

Broccoli and Cauliflower Casserole

Good, but had to modify. Thought butter amount was ridiculous so used no more than 1 Tbsp. to saute onion (also added 2 cloves of minced garlic). Changed order of recipe by then adding milk, soup, and about 1/2 cup shredded cheddar (not a pound of Velveeta!) to make a sauce THEN stirred in the broccoli, cauliflower, and rice. All fit into an 8x8 glass dish. Sprinkled top with freshly ground pepper, Italian bread crumbs instead of crackers, and a little more cheddar. Would be good with ham on side or even in the casserole.

Spicy Vegetarian Lasagna

Very good but missing something. The name is a bit misleading as I did not think it was spicy at all, and really the only vegetable besides the onion is bell pepper. A more accurate name would be "Four Pepper Lasagna." Next time I make this, I'm going to add more onions and more spices to the sauce such as salt, pepper, oregano, and basil, as well as more red pepper flakes than what the recipe states, and/or Italian seasoned diced tomatoes. I was also surprised that the recipe didn't call for garlic so next time I'll add a couple cloves. I think these changes will give it the depth of flavor that it needs.

Baked White Bean and Rosemary Spread

You have to really like rosemary to love this spread. I thought it was good but a little too rosemary-y. Next time I will use half the rosemary and some other herb or spice, not sure what yet. Mine never did bubble either and got a little dry, could use some moisture or creaminess. Maybe I'll try adding a little cream cheese next time. Tasted good with Frank's Hot sauce.

Acapulco Chicken

This recipe was good but not as flavorful as I expected. Next time, I would add garlic, more tomatoes, and use seasoned rice. I'd also add more heat, maybe with some cayenne pepper.

This was OK. Next time I make it I won't use teriyake sauce. I didn't think it really went well with the other flavors. I might also try montery jack cheese instead of mozzarella.

Wendy Jae's Hummus

This recipe was ok. It seemed like it needed "something." I added salt and pepper, then paprika, then cayenne pepper but it still wasn't right. It tasted OK on multigrain crackers though. Also, my blender wouldn't chop any of the ingredents so I had to use one of those hand crank choppers that you see on tv (the Smart Chopper). If I make it again (that's "if"), I'll probably try adding red peppers or something.
