green salsa (green tomato canning)

ok so I modified.like always because I made 1-1/2 batch. I did not have long chilis I used red and green bell pepper. and added about 2 TBSP Cilantro and 1/2 tbsp more Cumin and juice of ne lime.... next time might change the lemon juice to lime or do 1/2 and 1/2. I also added a tsp of chipotle powder and 1 TBSP brown sugar.. YUM

Blueberry Zucchini Bread

so great I modified it of course... applesauce instead of all the oil and ww flour and I added 3/4 cup grated carrot as well.. and a 1/4 tsp. nutmeg. and someone put together a strudel topping that I added as well.. Kids LOVE IT! me too!

Beverly's Get Up & Go Breakfast Cookies

These are great! I changed to 1/4 cup butter to 1/4 cup applesauce. 1/4 cup sugar and 1/4 cup dark brown sugar. I used 3 tbsp fresh O.J. with pulp and 2-1/2 TBSP zest. and I used 1/2 cup granola. Next time I will add 1 cup of granola. I needed a bit more crunch. Then after they were cooled I made a little orange glaze (1tbsp fresh O.J. and 1/4 cup 10x sugar) and lightly drizzled over. These were so orangey and yummy!

Pomegranate Jelly

I love pomegranate anything so I figured this looked good. I read a lot of the reviews and decided to modify a smidge. I juiced my pomegranate in my juicer rind and all.... saved so much time and came out just fine. It really separated all the rind and seeds and left only the beautiful (costly) juice. I decreased the sugar to 6 cups , used about 1/3 of a cup of bottled organic lemon juice and a pack and a half of powdered pectin. SURE Jell is the brand I used. I had no problem with it setting. It is not a super tight jelly but not liquid either and I did notice that it took a good 24 hours for it to set up well so maybe patience is the key. I gave this as gifts and have had rave reviews. They are already asking for more. So I suggest a double batch! Thanks for posting this recipe..it was easy and by far the best jelly I have ever had!

Iced Pumpkin Cookies

yum I only used 1/2 cup sugar and 1/2 cup Brown Sugar. I iced them with a light cream cheese icing and then sprinkled cinnamon sugar on top. My kids loved these!
