Oatmeal Chocolate Coconut Chewy

Delicious!!! I cut the recipe in half and got 44 cookies. I sub'd egg white for the egg and sub'd less than 1/4 cup whole wheat flour in place of equal amount of AP flour. Used Ghiradelli bittersweet chocolate chips too. Wonderful texture ... lightly crisp on outside and soft on inside. Really yum!

Mexican Baked Fish

LOVED this! I made this a week ago and have been craving it ever since. My husband and 2- and 4-yr-olds loved it too. And it was so easy! Will definitely add this to our dinner rotation. Thanks so much for this recipe!

Spiced Pumpkin Seeds

YUM! I could honestly tell my kids these seeds taste like salty, buttered popcorn, because they do! And they smelled so good in the oven. I tried this recipe with squash seeds. Sub'd olive oil for the margarine and doubled the salt and garlic salt. Can't wait to make it again.

Gobble Up Granola Snacks

My 2- and 4-yr-olds enjoyed this snack. And my husband said it tasted professional, the kind of treat we'd find at our favorite bakery. That's the kind of comment I LOVE! Based on other reviews, I sub'd honey for the corn syrup and up'd only the peanut butter to 2/3 cu. I also sub'd Craisins for raisins and added a half cup of white chocolate chips. YUM! They don't stick together as well as rice krispies treats. My 2-yr-old wanted a spoon to eat this. But my 4-yr-old forged on with just her hands. And I pressed it all into a 9x9 dish and made 16 squares. Thanks for the recipe!

Spinach and Orzo Salad

Easy and yum! I use whole wheat orzo and fat-free feta. I also like to toss in black olives. Grape tomatoes would bo good too. It reminds me of Whole Foods' orzo salad. I've served this two times to company and have gotten great reviews. My mother-in-law even asked for the recipe. =)

Best Marinara Sauce Yet

My 5 yr old said the sauce tasted like ice cream, licked the bowl clean, and asked for more. WOW!!!! Very easy to put together. I followed others' suggestions and made a few changes: -Used canned crushed tomatoes -Sub'd dried parsley -2 cloves garlic -1/4 cup white wine (I used chardonnay) -Added 1 Tbsp brown sugar Thanks for the wonderful recipe. A definite keeper!!!

Fruit 'n' Spinach Salad

I made this for a party yesterday, following the recipe exactly (but without star fruit, as I didn't have it). The salad got a lot of compliments and many asked for the recipe. One of the 6 yr old guests was practically licking the salad bowl clean. Definitely try it. It's delicious!

Black Bean and Corn Salad

Easy and good. My 2-yr-old is snacking on it now ... "Mommy, it's yummy!" I omitted the cheese, onions, and celery and sub'd lime juice for the lemon juice. Planning to serve it tonight as a side to CHRISTYJ's Mexican Baked Fish. Can't wait.

Delicious salad! My husband couldn't get enough. I didn't have almonds, so I toasted some walnuts ... excellent! And I used plain balsamic vin. Thank you!

Egg-Free Low-Fat Oatmeal Cookies

My husband -- who strictly watches his cholesterol -- LOVED these cookies. My modifications: 1/2 cup brown sugar (no white); 1/2 cup each all-purpose & whole wheat flour; 1 tsp cinnamon; 1/2 tsp nutmeg; 1/2 cup walnuts; 1/2 cup dark chocolate morsels. I also shaped and flattened the cookies before baking. I personally found the flavor to be good, but the texture to be more muffintop-y than cookie. I agree with another reviewer that these would be better baked as bars. My 3-yr-old assistant baker took one nibble and wasn't a fan. But again ... my husband loved them! Thanks for the recipe. (It's hard to find butter- and egg-free cookie recipes for people watching their cholesterol.)
