Chicken Breasts with Olives
I was craving something tangy and different to go with my chicken, and this recipe did not disappoint! I will admit that I made a few changes based on our own tastes and what we had in the cupboard (dried basil instead of terragon, olive oil instead of butter). I baked the dish in a covered pan based on another cooks review, and I think this helped to seal in the flavour. I crumbled some feta cheese ontop and baked uncovered for the last 8 minutes of baking. I'm not sure what the one reviewer claiming that this recipe lacks flavour was talking about, this was exactly what I'd hoped it would be.

Butterscotch Oatmeal
This is the first time I've made oatmeal that wasn't from a box or a package. It's really good, nice and creamy, and very hearty! I do agree with other reviewers that it's a bit sweet as is for breakfast (and I do have a sweet tooth!). I would suggest cutting the brown sugar down to a generous 1/4 cup, and adding a splash of vanilla. Next time I'll try adding some fresh fruit too!

Butter Tarts II
This recipe was simple, but so was the taste. Its fine if you're looking for an OK tart. I personally prefer a butter tart with a gooier center and more filling. The addition of lemon extract was interesting, but I did find it took away from the sweetness a bit. If that's what you're looking for in a tart, its great. Personally, I've had better.
