Mini Pumpkin Muffins with Orange Drizzle

Just made a batch of these. I made a couple of changes due to taste and necessity :) I only used cinnamon due to taste, I used light brown sugar due to necessity (all I had) and added 1/4c more sugar to taste, added vanilla to the batter and glaze [I'm addicted to vanilla :) ] And I used whole wheat flour. My biggest change due to necessity was to use 1 medium banana instead of the 2 eggs. I was unaware that the last of my eggs were used this morning so I scrambled (no pun intended) to find a substitute since i already had everything started. I found out online that in muffins you can substitute eggs for banana so long as you compensate with a rising agent. Since this recipe already had 2 tsps of baking soda I was not concerned. I baked for closer to 13 minutes and these came out wonderful! They are moist and not heavy at all! The glaze is perfection on these muffins. I am very happy with this recipe and will definitely make these again. I hope this helps somebody :)

Cheesy Ranch Potato Bake

Cocoa Banana Bars

Definitely more like a cake than a cookie bar, but still very good. Only minor changes I made were 1/2 whole wheat and half white flour, 1/2 white and 1/2 brown sugar, I used 1/3 cup of cocoa since some complaints were about the chocolate flavor not being strong enough and I mixed in 1/3 cup of mini chocolate chips. But what really makes it is adding a peanut butter glaze. It puts it over the top and its so easy to do. Peanut butter, powdered sugar and water and blend til smooth. There is a recipe on this site for the exact measurements. This is a fun way to use those over ripe bananas! Thanks!

Extreme Banana Nut Bread 'EBNB'

Awesome banana bread! It is plenty sweet so if you don't like it that way you could definitely cut the sugar some. I also recommend using real butter and creaming with the sugar. I used 1/2 whole wheat flour and 1/2 white and 1/2 brown sugar and 1/2 white just out of personal preference. Thanks!

Chocolate Zucchini Cake III

I am only putting 4 stars because my husband and father thought it was not sweet or flavorful enough. They would put three stars and I would put five. I really liked this cake. I made it in a bundt and baked for 50 mins at 350. Then I glazed it with a simple powdered sugar glaze. I really enjoyed the walnuts in this and I think some chocolate chips would be good too. I also did some of the changes that others did with 1/2 whole wheat flour 1/2 all purpose white and 1/2 applesauce and 1/2 oil. Thank you very much!

Oatmeal Pancakes II

I did make a couple minor changes by using whole wheat flour, melted butter instead of oil, and adding some mini chocolate chips and banana after the batter was blended. I dont have a food processor right now :( so i used my blender. These came out so tender and wonderful. I will definitely use this recipe from now on. Thank you!

Zucchini Bites

These are more like bite sized quiches rather than muffins. I saw a reviewer post that they would be good with soup or chili so I decided to make these to go with the chili I was making tonight. Im not so sure if I agree that they are a good mix with chili, I will stick to cornbread :) Otherwise these are not bad, just better as snacks or appetizers. And they should be called Zucchini Quiche Bites !

Basic Broiled Chicken Breasts

This is how I will prepare bone in chicken breasts from now on. However, it did take closer to 15 minutes per side rather than 10. I don't know if that is because my chicken was larger or not. I did sprinkle some season all salt on the chicken too, just for my family's taste. But the chicken was so moist on the inside and wonderfully tasty crisp skin that I called my mom and told her that this is the way to prepare chicken from now on! Thank you!

Chicken Cordon Bleu Bites

These were so yummy.... but I did make a couple changes. I rolled the balls in seasoned bread crumbs and did not fry before I baked. I also only had sliced lunchmeat ham and provolone instead of swiss. I also rolled cream cheese in with the ham and cheese which was an awesome addition! And to add extra flavor to the chicken i added some granulated chicken bouillon. Hope this helps someone :)

Lemon Blueberry Drop Scones

This was delicious. I used strawberry yogurt instead of lemon and omitted the lemon peel and for the glaze I smashed some blueberries and added them. These are moist and tender and I love this recipe. Thanks!

Cake Balls

I wish I would have taken a picture of these. Everyone thought they came from a bakery! I did it for my daughters 3rd birthday and used strawberry cake mix, vanilla frosting and dipped it in white chocolate. Then i took the remainder white chocolate and made it pink to drizzle over the top. And I served them in cute mini muffin cups. What a hit! I only needed half a container of frosting and Im glad I didnt use the whole thing. These may take a little time but they are not hard to make in the least bit.*Update* For a luau I used pineapple supreme cake mix, using pineapple juice instead of water and adding about 1/3-1/2 cup of crushed pineapple then baking. I used vanilla frosting and dipped it in white chocolate with coconut extract mixed in then topped with toasted coconut. WOW!

Mock Filets

They were good mini meatloaves :) I did change the sauce because we are not huge ketchup fans by adding a tblsp or two of steak sauce and because I do not have dry mustard I used dijon mustard. And so the only complaint that came to me was that they wish there had been more sauce! Thanks!

Dessert Crepes

I always thought I needed a special pan to make crepes and I thought it was hard to do. Neither one of those is true. I used a regular nonstick pan and it was so easy! No harder than making a pancake. These crepes are absolutely awesome and Im glad I tried this even though I thought I wouldnt be able to do it. :) The only change I made was to add some vanilla to the batter, and I served them with a lightly sweetened cream cheese mixture and a choice of peaches, pineapple, and orange marmalade. YUMMY!

Grilled Sausage with Potatoes and Green Beans

Absolutely delicious! I roasted in the oven at 425 as other reviewers had suggested. But before I put the ingredients in the pan I first browned the sausage with worcestershire then removed it, added some butter and chopped garlic and sauteed my 2 cans of drained green beans, removed them and with a dab more butter browned my yellow potatoes with the onion. Then I mixed it all together in the roasting pan and covered with foil and cooked it for about 25 minutes. The whole family loved it! Even my toddlers! The flavor of the smoked sausage permeates the whole meal. I can see how this would be so good on the grill! Thanks Tonya for the new recipe!

New Orleans Corn Bisque with Smoked Sausage

New family favorite! I browned the smoked sausage in the pan then removed it to melt the butter and cook the onions. Just to add that extra depth of flavor. This recipe was so delicious and it is easy to change up some. Use different sausages (andouille would be awesome!), add garlic, cajun seasoning, etc. whatever your family likes. Serve with a good sweet cornbread. YUMMY!

Potato Soup

The only reason this soup would come out bland is if your mashed potatoes were bland in the first place. This soup was delicious! But when I make my mashed potatoes I use milk, butter, sour cream, garlic salt, and pepper. So they have a lot of flavor in the first place. A good way to add more flavor to the soup is to melt some cheese in it as well. Thanks for the recipe!

Sour Cream Pork Chops

My family adored this recipe. I was concerned on the possibility of bland chops because of other reviews so I seasoned the flour very well. Then I browned them nicely in some oil. They were delicious! No flavor issues here. I served them with mushroom rice and some veggies.
