Lemon Ricotta Cheesecake Squares

I purchased store brand ricotta cheese and that may be the problem, but I was really hoping for a cheesecake flavor and consistency and it was not. So if you make this, use good quality ricotta.

Herb Rubbed Sirloin Tip Roast

I made this a second time leaving the roast in the fridge in the marinade for 8 hours. I also added chipotle seasoning. It was cooked to medium rare by preference. It was aaaamazing! And it was kid-friendly!

Cinnamon Rolls III

I have had so many compliments on these! They are better than any other - and I've tried many! I have made these so many times that I have made a few changes. I make the dough in the bread machine (liquid first, dry, then yeast on top) then bake in the oven. For the icing: I use the whipped cream cheese (just for ease), 1 1/2 cup conf sugar, and add 1 tbsp vanilla and a dash of salt. UPDATE: I have since made these and cooked the second pan for 1/2 the time written for then put them in the freezer. When ready to use again, thaw and cook. May have compromised a small amount of "fluffyness" but were just as delicious on a day we wouldn't have had time to make them otherwise.

Awesome Korean Steak

This is a great recipe that even my picky kids eat. I place this in a ziploc overnight to marinate, skipping the sugar because the mirin adds enough sweet flavor. The next evening I skewer it with mushrooms and cook it on the grill. Great! Thanks!

Tzatziki VII

This was great on gyros! Made a much smaller portion with a standard small plain yogurt and one cucumber. Skipped the dill. Added McCormick Greek Seasoning. Let it sit in the fridge for a few hours beforehand. Used with chicken seasoned with the same Greek Seasoning in pitas w/feta, lett, tom, etc. Yum! This is my new staple recipe. Thanks!

Orange, Walnut, Gorgonzola and Mixed Greens Salad with Fresh Citrus Vinaigrette

This salad is very good (addictive, in fact) with the following changes (some to decrease the amount of sugar): use walnut oil in place of one of the oils, use mandarin oranges instead of navel oranges, no added sugar, less OJ, regular walnut pieces, and bagged spring mix to make it snappy!

Baked Ziti I

This was a real hit at my house - and that includes a lot of PICKY eaters. I used RAGU with sauted onions/garlic at the advice of a friend that makes this and it turned out great. The only feedback was that it needed more "stuff" in the middle (sour cream) and more cheese...can you ever REALLY get too much cheese??? I think not!
