"Good job, Mom" -enough said, right? These were great and they were my first enchiladas (outside of the slow cooker)! Following the general idea of others, I: cooked the cubed chicken in the slow cooker then shredded it, omitted water, added a can of enchilada sauce, a lot of spicy salsa, cumin, taco seasoning, chili powder, and sour cream to the chicken mix. I also used Monterey Jack cheese instead. Next time I will make double and freeze one!
