Roxie's Bran Muffins

Yum! Tastes like banana bran muffins. I used Raisin bran cereal, applesauce for the oil as well and used 1/2 tsp baking powder and 1/3 cup of honey as suggested by others. I think walnuts would be an excellent addition!

Sour Cream Chicken Enchiladas

Nice way to use chicken leftovers. I also added chipolte pepper and cumin. Next time I think I will make a cheese sauce to go over the top.

Golden Rum Cake

I ran out of white sugar, so I used brown sugar instead and I can't imagine it could've been any better! The brown sugar formed a prailine/caramel type glaze that was amazing! I think I will make more glaze next time because as long as you're saturating it with butter and sugar, you might as well go all the way!

Meatball Nirvana

Wonderful! I also exchanged the milk for egg and this worked well. I cooked them in the oven then I used Don Pepino tomato sauce (yellow can, simple, delicious, economical sauce for everything!) with them in the crock pot for a few hours and made the best meatball and provalone cheese subs ever!!

BBQ Pork for Sandwiches

Yum! This is delicious even before I add the BBQ sauce! I used chicken broth because its all I had on hand and put it in the slow cooker for about 6 hours. Plan to mix it with BBQ sce and some of the reserved liquid from cooking and warm it in the crockpot for an hour or two while we head out to church and when we get back home tonight it will be perfect!

Easiest Peanut Butter Fudge

I felt this was waaaaay too sweet, even with the reduction in conf. sugar to 3 cups and brown sugar to 2 cups recommended by other reviewers. On the flip side, this recipe makes an awesome praline sauce and I probably will make that again!

Million Dollar Cake

Kids loved this too. I mixed frozen coconut to some of the icing and added to a small portion and it was dramatically improved! Very tropical and light. I will add coconut to the entire cake next time! Great cake for a summer block party

This is my new chili recipe! It did seem dry, so I added a half bottle of Corona and I seasoned it with chipolte seasoning. Topped with cheese and sour cream, it was great!

Charley's Slow Cooker Mexican Style Meat

This was a really good alternative to ground beef for tacos. I used Franks Red Hot and chipotle seasoning instead of cayenne because its what I had on hand, and cooked it for less time (?4 hrs) just until done and shredded it with a fork and spooned the broth over that and refrigerated it for the next day. We used the 10 min salsa recipe from this site and added guacamole, sour cream and cheddar to soft tortillas for a fast, yummy weeknight meal!

Delicious Ham and Potato Soup

Yumm! I used chicken broth instead of water and I didn't have ham, so I subbed "real" bacon bits instead. I made it extra creamy with a little half and half, I blended in sour cream at the end, and served it with cheddar cheese on top. This one is a keeper! I since tried to use another potato soup to save time and my kids noticed and wanted this one again!

Peanut Butter Bars I

These were very good! Very sweet, I will probably try a little less sugar next time. I just smashed grahams to make crumbs which made it more fun fo my helper! I used only 1 stick of butter (1/2 cup) and they turned out fine....except the first one out of the pan crumbled so I had to eat it :) All the rest were perfect!

Corn and Crab Cakes

These are pretty good. I was hoping for kid friendly, but it didn't make that cut. Somewhat budget friendly at approx $8 for all ingredients. I mixed the ingredients and placed in the fridge in patties and didn't have too much trouble keeping them in shape. If I do make this again, I will blend the creamed corn first so that pieces of corn are not obvious on the cakes..that raised an eye brow or two :)

Chicken Enchiladas I

"Good job, Mom" -enough said, right? These were great and they were my first enchiladas (outside of the slow cooker)! Following the general idea of others, I: cooked the cubed chicken in the slow cooker then shredded it, omitted water, added a can of enchilada sauce, a lot of spicy salsa, cumin, taco seasoning, chili powder, and sour cream to the chicken mix. I also used Monterey Jack cheese instead. Next time I will make double and freeze one!

Red, White and Blue Strawberry Shortcake

This cake tasted great and was fun to make with the kids. Very patriotic! Next time, however, I will use a large cool whip because it was a thin layer when we were done and that left it a little dry! I think I will also split the cake in half and place a layer of strawberries and whipped cream between the layers, then top with the extra cool whip and American flag decorations.

Slow Cooker Chicken and Dumplings

I made a faster version of this on the stovetop because of time constraints. I used no butter or onion. I cubed and boiled the chicken for 20 min covered with bay leaves, celery salt, and poultry seasoning, then pulled the chicken out and shredded it. I strained the 2 cups of broth left and added 3 cans of cream of chicken soup. I simmered it for about another hr uncovered and added 4 quartered pilsbury frozen buttermilk biscuits in the last 30 minutes. It was better than my previous attempts in the slow cooker! Even my picky eaters liked it!

Chicken Flautas

This is a kid-approved recipe at my house. I followed the advice of previous reviewers and softened the tortillas in the microwave and sprayed with cooking oil to cut down fat/calories. I had purchased flour tortillas by mistake but they were fine - will try corn next time. I used the "10-minute zesty salsa" recipe from this site and made it extra spicy and poured it over the shredded chicken a few hrs in advance. I added extra cumin and mixed in 2 oz cream cheese to the chicken mixture when preparing to fill the tortillas as per previous reviewers. The chicken mixture was so good leftovers were eaten alone.

10 Minute Zesty Salsa

I made this salsa and my kids raved about it being better than our local mexican restaurant salsa! I did change things up a bit based on what I had on hand at the time. I used Rotel w/Chiles and also added Ortega Mild green sauce for flavor. I keep jarred jalapenos on hand because I use them so often and they work great in this recipe. I used sea salt but no pepper, no olive oil. I made it a few days ahead and it actually got better over time.
