Portuguese Fava Bean Stew

Really really tasty, although I made a decent number of substitutions due to various items being unavailable. I didn't have very many fava beans and I subbed in a Mexican chorizo and red chili sauce because my local supermarket didn't have chourico or chili paste available. Served it over rice. Will definitely be making again!

Bean Soup With Kale

Very tasty. Cooked it pretty much as-is, except that I mashed the remaining beans manually and simmered the soup for about an hour and a half to let the flavors mix all together. It was a big hit with my friends!

Summer Squash Chicken Alfredo

Fantastic. Used the Quick and Easy Alfredo Sauce recipe on this site. Didn't have almonds, and I substituted chopped fresh tomatoes for sun-dried because that's all I had, but the fresh tomatoes were actually a really nice and light counterpoint to the overall heaviness of the dish. Will definitely make again (and again).

Chinese Chicken Fried Rice II

Delicious! This was my first attempt at fried rice, so I was happy with how easy it was and how tasty the result was. I added red and green pepper (diced) and baby carrots shortly after putting the onion on.

Parmesan Chicken

Delicious and easy. I made the modifications suggested by the 'most helpful' commenter: baked it at 375 and used butter and additional Italian spices in the breadcrumb mixture. With 10 minutes to go, I topped the breasts with pasta sauce and more parmesan.

Actually Delicious Turkey Burgers

The name doesn't lie; these burgers rival beef burgers, and that's saying something coming from a big fan of red meat. I made most of the recommended changes of the 'most helpful' review (adding more garlic, using the yolk as well as the egg white, worcestershire, and a tad of soy sauce). Like the second 'most helpful' review, I grilled them on a George Foreman, and they came out just fine!

Salsa Chicken Burrito Filling

Very tasty! Made some modifications: I made a 1.5x batch, used homemade taco seasoning ('Taco Seasoning I' on this site), doubled the tomato sauce, stepped down the cumin and chili powder, added peppers, onions, rice, and a can of refried beans. Also used the filling to make enchiladas (read ET's review of this recipe). Will most certainly make again.

Spicy Vegan Potato Curry

Very tasty! Only used 3 tsp of garam masala so it wouldn't overpower, otherwise left the recipe unaltered. I'm a pretty inexperienced cook, but I managed this recipe just fine, and the result was WELL worth the effort. Next time, I'll definitely up it to 5 (LARGE) potatoes.
