Green Chile Spinach Quiche

Made as written...amazing! My whole family loved it....including a 3, 4 and 8 year old....they even asked for seconds! Think its got room for adding various ingredients and still be so very yummy but also delish as is.

Old Fashioned Mac and Cheese

Just like my grandma used to make! Been trying to copy hers unsuccessfully. Think the trick was the white sauce. Grandma' s recipe was just milked poured over top and mine just wouldn't set. Took my white sauce quite some time to come to a boil but it was worth the wait. Think there can be some flexibility with cheeses used, my grandma used to use the big block of government cheese which I used to think was processed cheese but now I think it was actually American cheese. Definitely a keeper!

Sloppy Joes II

Perfect as is! Same ingredients as our fav meatloaf recipe from this site so tried this sloppy joe recipe. So yummy and easy! Whole family loved them. Even doubled the recipe both times so we could have plenty of leftovers!

Quick Hoppin' John Soup

Loved this last year and have been looking forward to making up a big pot for New Years! This combines all the things that I love. I think it has some wiggle room to change per taste. Overall a great recipe and perfect for a cold day.

Cafeteria Carrot Souffle

I've never had the cafeteria version of this but my family really liked it. I did use less sugar per other reviewers and was glad. My 6 year old asked me to make it again so I'm counting that as success. I did have to boil my carrots for much longer than the recipes states. Wasn't clear if they should be very mashed or if there would be chunks of carrot. Either way I'm sure it would be good.

Mexican Rice II

Great recipe! The family all ate it and most asked for seconds...and I have some picky toddlers! I even had to make a substitution because I didn't have tomato sauce...used ketchup instead and it was still yummy. Obviously think it will be even better with tomato sauce. Love the simple ingredients and consistency of this rice.

Chili Dog Casserole II

Enjoyed making this casserole for the family. I think you can be as creative as you like and the finished product will taste like chili dogs. The best thing about it was that all chili dogs were hot and ready at the same time. I don't like how the chili gets cold when serving up individual dogs and this way they were warm and ready to eat at one time. I did pan fry the dogs before cooking as per another reviewer. Will make again.

Make Ahead Lunch Wraps

Great idea. Made these last week with some variations and enjoyed an easy and delicious lunch and snack for several days. Recipe allows for variations depending on taste. I cut this recipe in half and had a lot of filling. I used taco sized flour tortillas which I like better than the larger ones. I also used this filling for nachos.

Roasted Garlic Mashed Potatoes

Oh, so yummy! This recipe is definitely a keeper. My husband and I ate most of the potatoes because my kids don't like mashed potatoes...silly rabbits! I did not measure anything and it was great. I used red potatoes because they are my fav and it was still so good. I think there is room for variation with this recipe and they should still be fabulous!

Home Made Top Tarts!

My kids thought I was amazing and I enjoyed making them with them. They tasted very yummy albeit sugary like the box kind (not that I mind and all but I don't buy them for that reason!). I had a hard time making the pie dough into a square so I just went with a few odd shaped ones. This is easy and tasted great. I did cut the ingredients in half for the icing and it was plenty of icing. Will make again for special times with my kids.

Spinach Brownies

Yummy! I have made these two times and they have been slightly different each time but delicious either way. My kids, ages 6, 2.5, and 1.5 all ate them and that's always a good thing for me. I think there are a lot of different ingredients that could be added but they are perfect the way the recipe is written. **I make these at least twice a month now and am still experimenting. I like to saute the onions in 1/4 cup of butter and then wilt the fresh spinach in the same pan. I then add it all to the other ingredients and bake. For me this technique brings the results that my family likes the most.

The Best Banana Pudding

This recipe is the almost the same I've used for years now. I add an 8 oz cream cheese block. For those of you who thought this was too sweet you might want to add the cream cheese and see it that helps. I always blend the cream cheese with the condensed milk. Then add the pudding and whipped cream. This is a yummy banana pudding and it's always gone when I take it to share!

Easy Batter Fruit Cobbler

After reading the recipe I'm realizing it the essentially the same one I've made forever but with more steps. One cup milk, one cup Bisquick, and one cup of sugar: mix, pour over a cup of fruit, drizzle with butter and sugar and bake for one hour at 350. Even easier. More cake like but still yummy.

Scotch Eggs

These were very tasty but as several others have noted the measurements in this recipe are off. I used 2 lbs of spicy deer/pork sausage. I went ahead and hard boiled 5 eggs and definitely could have used 6 or 7. It only needs two beaten eggs to coat. Four cups of dried bread crumbs was not necessary. I used Progresso Parmesan bread crumbs which are very good. I wasted time pan frying then baking and should have just put them in the oven to bake. The result was very tasty albeit quite fattening. They were easy to make and I will make them again but probably only for special occasions.

Mint Chocolate Chip Cookies

Easy to make and very yummy if you're a mint and chocolate fan. When I tasted just the cookie dough I thought it might need a bit more mint extract but after they were baked they were perfect. Followed the recipe exactly. Will definitely make again.

Jack-O-Lantern Pumpkin Pancakes

I thought these were so yummy. I followed it closely except from one review I decided to substitute applesauce for the oil and I used whole wheat white flour. My kids really liked them especially my 9 month old who is just starting table foods. Didn't need syrup and were yummy later even cold. **Update: I have also substituted mashed banana for the pumpkin and really liked the flavor. I also used mini choco chips instead of making faces. These stay good for several days if kept in the refridgerator.
