Swiss Potatoes Gratin

I usually don't like Potatoes Gratin, but I loved the flavor of these with the Gruyere Cheese! Definitely don't sub any other cheese. I added lots of spices in with the ricotta (1 T each of salt, parsley, oregano, and a little pepper) & it was very good. The potatoes were perfectly cooked. I wish I would have mixed the egg in with the Ricotta b/c when I mixed it with the cream & poured it on top, the eggs sort-of rested on the top & looked weird. Also, I did not peel my potatoes. Excellent new side dish to add to my recipes! thank you!

Great recipe! I also subbed applesauce for half the oil. Ended up with 2 beautiful loaves and 6 muffins.

Chicken Chimichangas with Green Sauce

Pretty good & super easy. I would recommend softening the cream cheese before mixing with the chicken, otherwise you get a tuna salad-like consistency.

Yum! Loved it. A little greasy if you cook the sausage in the same pan, but I didn't mind- great flavor! The second time I fixed it, I cooked the sausage first, drained on paper towels & then cooked the potatoes in the same pan, omitting the olive oil.

Slow Cooker Chicken Stroganoff

Garlic Alfredo Tilapia

Really good, and a nice new way to cook/serve Tilapia. I used way too much creole seasoning & it turned out a little salty, but that was my fault. Served with rice & broccoli for a nice meal.

Spinach Quiche

I'm giving 5 stars b/c for a quiche, this is excellent & quite easy. Quiche is usually not my thing, but I actually liked this one. Next time I think I will leave the mushrooms out... although I usually like mushrooms, they just didn't fit this dish. I cut back on the butter as others suggested & otherwise followed as directed. There was a little extra, so I just baked it in another pan without a crust. Turned out great!

Pumpkin Chocolate Chip Cookies III

Yum! I love Pumpkin Choc. Chip cookies & have been looking for a good recipe for a while... this nailed it for me! I subbed applesauce for 1/2 the oil and did a combo white/whole wheat flour, left out the walnuts, cut back on the choc. chips (& used the minis) & they were so delish! Definitely keep refrigerated or eat hot out of the oven.

Jen's Nine Layer Dip

This was delicious! The bacon really gave the beans a great flavor. I would like a little more green onions and a little more tomatoes than what the recipe calls for, and maybe half the sour cream... but that's just my personal taste. The recipe is easily adaptable.

Lime Chicken Soft Tacos

Love this recipe just the way it is, but it's easy to adjust to your own tastes... we really like to add cilantro (instead of oregano) before simmering. Just don't leave out the lime! Yum!

Beer Cheese Soup III

This is another favorite in my house & great for kids too! After making this for several years, I have made a few changes that I think make a perfect broccoli cheese soup. I cut out the onion, for personal taste preference. I also just use about 2 cups of fresh steamed broccoli (no cauliflower) and stir it in for about 5-10 minutes. For the cheese, I use 8oz velveeta and 8 oz sharp cheddar. Also, I have found that just about any beer will work, but I prefer to use the Coor's Non-Alcoholic. You can sub Apple Juice/Water, but it will change the taste dramatically.

Loved it! What a fabulous, healthy way to enjoy pizza! Just be careful if your grill cooks unevenly... you may end up with a couple of crusty pizzas while the others are just fine. Keep an eye on ALL of them!

The Best Rolled Sugar Cookies

Definitely deserves the title! I increased the sugar and vanilla just as others had suggested & they were fabulous! I just rolled into balls, dipped in sprinkles, baked & enjoyed! (But they would be easy to roll out too.)

Chicken and Bowtie Pasta with Asiago Cream Sauce

My family loves this recipe. We make it often, in fact, my husband begs for it and he is not a big pasta eater. I do make a few changes. I use about 1 and 1/2 - 2 lbs chicken & season with salt and pepper before cooking. Instead of porsciutto I use about 2 cups of fresh steamed broccoli and just mix it in last. Also, shred some extra Asiago to serve on top... YUM! It makes a lot, but it's one of those dishes that is even better left over.
