Outrageous Chocolate Chip Cookies

These are really good cookies. I highly recommend them! I also like that they have less butter than most cookie recipes as well as rolled oats. They are obviously not healthy, but at least they are a step in the right direction!

Tofu Parmigiana

In the past I have not had very good luck with tofu, but this recipe came out really well. In fact, it really tasted a lot like chicken parmesan. The best part is that the tofu does not have to be pan-fried like when you use chicken or eggplant. Excellent healthier option!

Easy Pesto

Easy and great with almonds! I soaked slivered almonds in water for 10 minutes before toasting them on a dry, hot pan. I feel like this achieves the best flavor and texture. I also basically doubled the garlic because I didn't think it had enough for my tastes. I didn't have nutmeg either. Finally, I added some parmesan cheese to enhance the flavor.

Homemade Flour Tortillas

This was a really easy recipe. I cut the recipe in half and used shortening instead of lard. It made 12 regular sized tortillas. For everyone who thinks that this recipe does not make 24, you are not rolling them thin enough! They should not be thick and resemble pitas or naan. When rolling them out they should be thin enough that you can almost see through them. Hope this helps.

Banana Pancakes I

This recipe was really good. I added 1/2 tsp vanilla extract and and used 2 tbsp applesauce instead of oil. The pancakes were delicious, they tasted just like banana bread! The only thing that keeps this recipe from receiving 4 stars is that they were a bit mushy.

Swiss Cheese Meatloaf

I made this for my husband who is a huge meatloaf lover and he loved it, of course. But the reason this recipe gets 5 stars is because I loved it, and I normally hate meatloaf. Great, easy recipe!

This is a really good recipe to make in a pinch. I felt, however, that it was not flavorful enough. I added salt and pepper to taste as well as poppy seeds. Still a very excellent base recipe that I will use again.

Buttery Soft Pretzels

These came out PERFECT! I proofed the yeast, put all wet ingredients in my stand mixer with the dough hook and added flour until it was a pretty stiff dough. I also added a few ice cubes to the oven to make them crustier. Will be making these again and again!

Caramelized Baked Chicken

I am giving this 5 stars even though I didn't have all the ingredients so I had to improvise a little, but I still think it was super delicious and will make it again for sure. Used on chicken breasts cooked at 375 for 40 minutes came out great

Popovers

Great and easy popover recipe. My husband DEVOURED these. They all popped beautifully without having to leave the ingredients at room temperature. ***UPDATE*** I have made these several times now and I have found that if I heat the milk in the microwave to feel warm to the touch and set the eggs in a bowl of warm water for a few minutes the popovers pop much higher than using cold or room temperature ingredients. I also use these in a popover pan that makes 12 and I set the oven at 425 for 15 mins and 325 for 10 mins. Comes out perfect every time. Also, make sure you mix the flour in last and make sure it is mixed until there are no lumps left. Good luck!

California Grilled Veggie Sandwich

This was really good! I am really not a huge vegetable fan, but I loved this! It was raining so I made it in the broiler, but it came out great. By the way, focaccia is REALLY easy to make, so if you can't find any at the store just make it!

Focaccia Bread

This recipe is excellent. The only thing that I did different was that I proofed the yeast (I heated the water and added the sugar and yeast and let it sit for 5 minutes) and I also added a tsp. of rosemary. I also omitted the mozzarella altogether and sprinkled the top with olive oil, sea salt and parmesan. This bread is great for grilled sandwiches as well as for dipping in olive oil with salt/pepper and garlic.

Easy Granola Bars

My husband and I can't get enough of these! The first time I made them with almonds/cashews/peanut butter chips and again with peanut butter chips/chocolate chips/almonds both times were sooo delicious. For chewier bars I added a bit of brown sugar and honey and some almond milk the second time around and they tasted EXACTLY like quaker chocolate chip granola bars.

I didn't have all the ingredients for this so I improvised (no almonds) (used balsamic/red wine/distilled vinegars) but this was REALLY delicious! I can't wait to make it again with all the correct ingredients!
