Cucumber Nut Bread

This was definitely different. I was surprised by the amount of cucumber it called for. Other "veggie" breads such as squash & zucchini bread only call for 1 cup. Or maybe since I blended my cukes in my Ninja, I ended up with more per cup? Anyway, the little ones liked it and I found that, toasted with butter, I could eat it. The cucumber flavor is very strong and hangs around. Since I have a lot of cukes from a friend's garden, I will try this again, but reduce the amount of cucumber and see how that works.

Corn Cob Puppies (Corn Dogs)

This was so much fun! I didn't have bacon drippings & I think I'll leave out the garlic next time. (Not for kids) I will warn you, this makes a lot! I should have halved it. I used leftover batter to fry up some squash slices...with a little syrup, they tasted just like corn fritters!

Banana Smoothie I

Tried this for an afternoon snack for the kids. They LOVED it! I made one with an egg (We have laying hens.) and one without. I couldn't tell the difference, only to know one had a protein boost. Like others I added some crushed ice. I will definitely be making this again and again! I'm thinking of trying other fruits, as well. Happen to have some peaches on hand...

Sourdough Chocolate Cake

This was amazing!!! I used oil instead of shortening and added a small box of pudding. It was sooo moist and chocolatey! It didn't even need frosting! I left it covered on the counter since I had no room in the fridge and it stayed fresh & moist for a day & a half, until it my husband & 5 kids devoured it. I like to buy seasonal pudding flavors when they go on clearance. I used Mounds pudding and it was great! I am thinking of what flavors would go with chocolate for next time, or maybe just omit the cocoa and use a flavor like pumpkin spice pudding. I'll update when I try it! *Update* Okay, it's official. This is an awesome versatile recipe! I just made it using the pumpkin spice pudding, adding 1tsp. cinnamon and 1/2tsp. allspice, with a hint (1/8tsp. each) of ginger & nutmeg. It tastes just like a moist decadent pumpkin cake! I didn't have anything to frost it with, but it surely didn't need it. My kids want me to make this for the family 4th of July get-together, using whipped cream to top. I can't wait to try other pudding flavors! If I could give this recipe more than 5 stars, I would! *Update* Pudding flavors tried...butterscotch-yum!...

Sourdough Pancakes

This turned out better than I had hoped! I am making the switch to sourdough breads for nutrition reasons. (Found out unfermented grains are bad for the teeth. I have 5 children & the dentist bills were too much!) The only recommendation I have for this recipe is to wait to add the water until all is blended to see if you'll need it. Mine did not need it and the pancakes fluffed up nicely. I have to double the recipe & it works fine. I just mixed it all up in one bowl--no fuss. The kids loved the pancakes! For lunch we'll try PBJ's...crepe-style! This will definitely be a regular in our house!

Sourdough Starter

I am glad I read the reviews. However, I did not do so until I had already mixed two batches in 2 quart jars. I quickly located a large pickle jar and transferred both batches. I didn't know how it would turn out, but hoped for the best. Another thing I "messed up" on was to use my fine wheat flour, which is my custom, in place of the white flour. It turned out fine, so far. Others were complaining that it was not sour enough. I am fine with that. We are not sourdough fans and the only reason I am trying this is for the nutrition value, having read that wheat products not fermented are bad for the teeth. Having 5 children, I am tired of the dentist bills! (I recommend googling "cavity reversal.") I make rolls every day, so this starter will constantly be in use. I only waited 24 hours to use and it was fine. Overall, I am happy with this recipe.

Caramel Sauce

I decided to try this recipe as I don't keep cream on hand to make "true" caramel. I made this per the suggestion of foxtell8: I simmered the unopened can for 3 hours and removed pan from heat to cool completely. The next day, I opened the can with no problems and dumped the thick caramel into a bowl to eat with apples. My husband flipped over it and my kids (11, 9, 7, 5, 2) all couldn't get enough. I didn't care for it as it retained that sweetened condensed milk flavor. I will probably make it again for the family as the SCM is something I keep in the pantry.

Ukrainian Apple Cake (Yabluchnyk)

I had bought 9lbs of apples to make some pies, but my children and husband enjoyed them so much, I didn't have enough! Thank you allrecipes for giving me a yummy recipe to use up the "left over" apples! This is a keeper~I will try other fruits as they come into season. But next time, I will add a little more sugar to the cake bottom. My littlest one scraped off the apples and left the cake.

Creamy Hot Chocolate

Just had snow in Georgia! While the kids were out playing, I realized I was out of hot cocoa. Allrecipes saved me again. I added about a cup or so of powdered milk to the water in place of whole milk, like was suggested. I also added one chocolate bar as the sweetened condensed milk flavor was a bit overpowering. Yum!

Southwestern Beef Skillet

I can't really give this a true rating because I didn't have chili powder or green beans. I used taco seasoning instead, along with the salsa. My family of 7 liked it okay. My two girls (6 & 9) had seconds, having added ketchup, of course! I will most likey make it again, as I always need an inexpensive meal for my large family!

Strawberry Fig Preserves

I was given this recipe years ago, but mine called for 3 of the small boxes of Jello and I boiled the mixture for 15 min. Also, I like my preserves more like jam, so I add 1.5oz (3 Tbsp) of liquid pectin with citric acid for a better jell.

Cantaloupe Bread with Praline Glaze

I had bought a rather large cantaloupe from the farmer's market. It was only so-so and I was having a hard time eating all by myself since my children didn't care for it. I am so glad I found this recipe! I was also pleased to learn, from the reviews, that pureed cantaloupe is like applesauce in that you can use it to reduce the amount of oil in a sweet recipe. So, I added a half cup more cantaloupe and used that much less oil. Turned out great! The children devoured this bread and were bummed when it was all gone! I think I'll have to plant some cantaloupe next year!

White Sauce for Pasta

I found this recipe while searching for a simple alternative to rice or potatoes. So glad I did! I made it according to directions, adding some browned ground venison to the sauce. Mixed with pasta, a veggie side and home made rolls, it was a hit! My husband and kids (4, 6, 8) kept telling me how good it was! I sprinkled shredded cheese on mine, but it was good without, too. Will definitely make again!

Simple Slow Cooker Chili

You can really use whatever meat you have on-hand. I used a Polish sausage I had in the freezer, but it would work well with little smokies, hamburger, or even left-over chicken!

Paul's Pumpkin Bars

I made this once to try it out and again for a church Thanksgiving dinner. It was a hit! I did substitute half of the oil with applesauce. I don't have a jelly roll pan, so to get the right height (the first time it looked like cake) I used a 9X12 and an 8X8 casserole pan. I plan to take this to my in-law's for our Thanksgiving!

Absolute Best Pancake Syrup

This is a very rich syrup. There's no maple so it's not really like traditional pancake syrup. When I make this, I halve the recipe and mix it with half a recipe of the Maple-Vanilla Syrup. Perfect!

Graham Crackers

This is great for a quick healthy snack! My 2-yr-old loved them and I thought they were pretty good, too. I measured out 1/2 cup milk, but added just what I needed, which was a little less than that. I believe where you live will determine that. I'm in Georgia, so the humidity played a role, I'm sure. I've found that to be true with other recipes as well. It was after 8pm when I started and I was too impatient to chill the dough for a trial-run, so I just sprayed a large pizza pan and roled out the dough under wax paper as thin as I could. After 12 minutes, I turned off the oven and let them continue to bake. I was watching a movie, so I just checked on them later and they were perfect! I'll make the rest tomorrow and see if chilling makes any difference. I can't wait to use them in a crust! Yum!

Pizza Crust I

After trying two different recipes, including the one on the back of the Fleishmann's yeast packet, I had all but given up on homemade pizza. My family and I are sooo glad I gave it one more shot! This one turned out perfectly with a delicious taste even my crust-finicky children (2, 4, 6, 8) loved! I did add a couple of dashes of Italian seasoning to the bread machine, but I don't know if that really made a difference or not. I can see us having homemade pizza weekly now! Thank you so much for a great recipe!
