Apple Cobbler Crumble
This rating is for the topping only. I had a jar of homemade apple pie filling a friend gave me. It was only a pint jar so I added some cut up apples to the mix to have enough to fill a 9x9 pan. I put a layer of topping as a crust, then the apples/pie filling, then the topping. My husband couldn't rave enough about this combo! Definitely a keeper!

Taco Soup IV
This is now my favorite soup! I was looking for a recipe to use tomato puree I had drained off a big can of tomatoes I was drying to make raw ketchup (which didn't turn out). I omitted the tomato sauce so I could use more puree. So I had to add extra spices. I just kept tasting and adding until it was right! My family doesn't care for onions, but I do use onion powder and I did put in a couple dashes of garlic. I also added more beans and some leftover rice. All that to say this is a great basic recipe that can be tweaked to your taste!

Cucumber Nut Bread
This was definitely different. I was surprised by the amount of cucumber it called for. Other "veggie" breads such as squash & zucchini bread only call for 1 cup. Or maybe since I blended my cukes in my Ninja, I ended up with more per cup? Anyway, the little ones liked it and I found that, toasted with butter, I could eat it. The cucumber flavor is very strong and hangs around. Since I have a lot of cukes from a friend's garden, I will try this again, but reduce the amount of cucumber and see how that works.
