Zucchini-Chocolate Chip Muffins

Super easy and turned out awesome. My kids said it was the best muffin ever. I left out the nuts, my kids don't like them. I did one batch with white flour and another with whole wheat. The whole wheat was not as good, but still enjoyable. I did sub non-fat plain yogurt for the applesauce though, both times, as I had no applesauce. And in the white flour version I added 1tbsp of ground flax seed for a but more nutritional value. Easy base that could be changed up with other add-ins. Definitely a keeper.

Best Bread Machine Bread

Although the instructions go against the machines instructions of yeast last, this was the best I've ever had from a bread machine. Very soft & light. As per other reviews I did put in 1.5 tsp of salt to ensure it did not rise too much and fall.

Best Chocolate Chip Cookies

Spicy Sweet Potato and Coconut Soup

Very good soup. I had no cilantro or sesame oil but loved it notheless. I did puree the soup at the end too and only added 2 cups of broth so it was thicker.

Delicious Ham and Potato Soup

This is the best potato soup I've ever made. Making the roux in the separate pot and then mixing it together creates a "souper" creamy velvety soup. My kids can't stop eating it and they are usually quite picky. I often sub bacon for the ham too. Its an easy base to add other veggies or meat too. Could make a great seafood chowder base.

Baked Spaghetti Squash Lasagna Style

I loved it. Husband liked it and 1 of 3 kids liked it. I used my own sausage & tomato sauce from the freezer and toped with cheese in a 13 x 9 casserole dish. I ate it for dinner & most of the leftovers. If you are looking for something low carb that tastes pretty close to real lasagna or spaghetti this isn't bad. My kids are super picky and didn't like the "yellow noodles" (their words).

Peach Cake II

I made this with a few alterations and it was fabulous. I had a bag of frozen peaches from our tree in the freezer so I just used the whole bag - which was probably more like 3 cups. They defrosted and were very mushy so rather than big chunks of peaches in the cake it was more like a puree. So having more puree allowed me to cut back on some oil and it was still moist. I added only 1/2 cup of oil. I also cut the sugar back to 1 cup and 1/2 of the flour was whole wheat. I ommitted the nuts also because my kids can't take food with nuts to school and I wanted them to have it for their snack. The cake was moist and flavourful and everyone loved it.

Cheddar Cheese Bread

Super yummy. My 1st loaf came out dense and really rich... second time it came out really light and fluffy. On my first try I wasn't really happy with it but after the 2nd time I LOVE it. I used old cheddar but it wasn't a really strong cheese taste. I think I might do the dough in the machine & then take it out and bake it in the oven with more cheese sprinkled on top. We had it with soup both times and it was lovely. And leftovers are great toasted for breakfast. Oh - also forgot to mention I used best for bread whole wheat flour for the loaf - no white flour at all.

Broccoli Cheese Soup V

Not being a huge fan of processed cheese this was not mine or my husbands favorite but my kids loved it. I will be trying a recipe with real cheddar next time just due to the personal feelings I have about the junk in velveeta.

Slow Cooker Split Pea Sausage Soup

Excellent and super easy to make. My kids loved the soup. I make a similar soup but with red lentils and it is my kids favorite. The only change I made was to use about 1/2 the sausage.

Sour Cream Chocolate Chip Cake II

This was really good as cupcakes for my kids. I misread and though it would be a chocolate batter with chocolate chips so when I got all of my ingredients out I realized it wasn't. I didn't want to look for another recipe so I added 1/2 cup cocoa powder and about another 1/3 cup of sour cream. Mine turned out nice and light and chocolatley and not crumbly like alot of cakes. I did not do the topper on here either. Since it was cupcakes I made a cream cheese icing. Was sooooo yummy with the icing.
