Herb Quick Bread

I'd like to say that this is a QUICK BREAD, which by definition is heavy and dense. That said, this was a wonderful recipe. I added a few extra herbs from my garden and 1/4 cup extra sharp cheddar, and the result was perfect with a thick bean soup. Definitely a keeper!

Baklava

I was looking for an easy recipe to use up the phyllo dough in my freezer, and this caught my eye. I had never made baklava before and was very wary, but it turned out amazingly! Since my little brother is allergic to walnuts, I used pistachios and pecans, and I added some orange zest to the honey mixture. We were all blown away by the result. Really simple to make, and fancy enough to serve anywhere. This one is definitely going in my recipe box!

Chocolate Cakes with Liquid Centers

This was an incredible recipe! I had no bittersweet chocolate, so I used two squares of unsweetened and two of semisweet, and the result was heavenly. Also, I followed the other suggestions and cooked it for 11 minutes, which resulted in a wonderful contrast between moist, cakey outside and gooey chocolate center. Very easy, very quick, and an amazing presentation. This is definitely going to become a staple dessert recipe!

Tofu and Noodle Coconut-Curry Soup

This recipe was amazing, and I don't say that lightly. However, I used only 2 tsp. each coriander and cumin, and 2 tsp. turmeric and ginger. I also cut the curry powder down a little, though not by much. The only other change I made was using 6 oz. coconut milk instead of evaporated milk and coconut extract. My family loved this, and I'll definitely be making it again. Tastes even better served with a pot of coconut rice!

Lemon Square Bars

I made this recipe exactly as-is and I can honestly say that they are the best lemon bars I've ever tried. They lasted all of fifteen minutes with my little brother and his friends around, and they begged me to make more. The only thing I did differently was dusting the bars with a light layer of powdered sugar just after they came out of the oven.

Black Bean Soup II

This makes a great vegan black bean soup if you use vegetable stock instead of water. I had to cut the water down to 2 1/2 cups to get anything but a put of liquid, but otherwise, this was a great recipe. It tastes even better if you add some salsa when you put the beans in, the more flavorful, the better. I used some spicy garlic salsa and it was wonderful!
