Spicy Avocado Chicken

Made this last night. It was very good. I cooked the onion in a tiny bit of bacon drippings which pumped up the flavor and I added three cloves of garlic, just because I love garlic! I will definitely serve this to friends and family.

Bacon and Date Appetizer

As a professional caterer I am always looking for new appetizers to delight the palate of my customers. This is extremely delish and easy. I used cashews instead of almonds and it was and is very good. Highly recommend this for anyone wanting something sweet and salty.

Lentils and Rice with Fried Onions (Mujadarrah)

I am hosting a Middle Eastern dinner in October and this will definately be on the menu. Loved the taste and texture, and the sweetness of the onions. I did add a bit of cinnamon to the lentils as they cooked and also cooked them in vegetable broth which added a bit more depth to the taste. I garnished it with a bit of cilantro and a dollip of yogurt. Served it with a cucumber salad and humus with pita. An excellent, authentic meal and delightfully vegetarian!

Hummus Lamb Casserole

I make my own hummus and have been looking for a recipe to incorporate hummus into, well this is it. Making it more Middle Eastern, I use ground lamb, sauteed with lots of garlic, cumin and oregano. On the finish I add a healthy pinch of kosher sea salt. A sprinkle of fresh cilantro adds a nice kick. I serve this with sliced sweet white onions and fresh basil. A nice trick my Persian friend taught me, and I love it, as do my dinner guests, it's very different.

Mandarin Chicken Pasta Salad

I am alergic to MSG, so, I switch out the onion soup mix for a miso soup NO MSG, adds the Asian feel, taste and is lower in calories. I just blend it in my mixer, with a bit more minced ginger and 1/2 tsp minced fresh garlic. For my spicy friends I add 1 TBS Picante Bufalo Sauce. It is very good, smoky and yeah, it's hot so go easy. Thanks for this recipe, love it!

Pesto Pasta with Chicken

I made this tonight. Used 1/2 jar of sun dried tomatoes, drained, sauteed the chicken in the sundried oil with 1 tsp of garlic salt, ant pepper. Cut into 1 inch bite size pieces with 4 cloves of garlic minced. Sauteed for about 14 minutes, then added the sun dried tomatoes and pesto, a nice hand full of Romano cheese and about 2 tbs of evoo. Sauteed, cooked pasta, took one lade full of pasat water, added it and reduced to a nice thin sauce with a bit of a kick. Major hit!!!

Lazygirl's Ground Turkey Stroganoff

This was delish and so good! Made some changes,but I always do. I sauteed garlic,onion and mushrooms,deglazed with a spash of sherry and then added a tbs of thyme. I then added a tbs of dijon to the cooked turkey. When it was all melded I added the cream of mushroom soup and 1/2 c of sour cream,onion, mushrooms and garlic to the pot and then a dash of paprika. Yummy, yummy and great for anyone on a budget. Added fresh parsley and butter to the egg noodles. Thanks for the recipe, keeper in my book!

Lemon Ginger Shrimp

Excellent! I added the bourbon whiskey as well, and it added quite a zip to the marinade. Marinated for 4 hours, used reserved to baste and some on veggies. Over all, it was excellent, delish and easy. thank you for sharing.

Baked Macaroni and Cheese I

Yes. I loved it. We all know how to make a roux, take the time to let the flour brown just a bit. I love the use of penne pasta, that takes in all of the goodness of the sauce. I tend to add more milk ( I use fat free 1/2 and 1/2) for a creamer mac. I too caramelize my onions, and add the bacon 1/4 into the mac and the rest on top as my family wants. This is the go to, "it's so cold outside, want comfort food recipe".. Thanks for sharing!

Used rotini pasta. Added a lot more cheese and went for a more cheese/butter/roux. Melting the cheese with the butter and adding fat free half and half, adding the cheese and then working the veggies into it. Roasted my veggies with garlic, just a preference, but very good. We went for fat free cheese also. It's fun to make good food and morph it into something we like. Recipe as it stands is great, we just made it work for our new diet! thanks so much, this is awesome!

Stuffed Zucchini

Yeah. Brown the meat first, drain, cook up some stove top, mix it together, make sure you add the insides of the zucchini with the meat and dressing mix. Add a bit of sage to the mix, one egg and blend well, load into a blanched zuc, ( blanch zuch for at least a 1/2 hour to get insides ready to shread. Top with some cheese of choice, bake at 350 for 1 hr and dig in!

Tomato-Cream Sauce for Pasta

I don't add sugar because the tomatoes have their own natural sweetness. Also use fat free half and half to cut down on calories. This is really great with bacon added! Cook 1/2 lb of bacon drain and throw in just prior to tossing over pasta or chicken, veggies, fish. It's a winner!
