Eggplant Parmesan For the Slow Cooker
I made this today and it was amazing. So simple and one of the best eggplant parmesan dishes I have ever had.

Slow Cooker Chicken Taco Soup
This soup just won the "soup off" contest where I work. It competed against 6 other soups, some of them absolutely fantastic. I was shocked that I won. I have made this soup twice, each time a little different and each time, it came out great. The first time, I had no idea how much of Bill's taco seasoning would equal a package of taco seasoning. I dumped all of it in as I saw someone mention that they used 4 tablespoons of Bill’s seasoning. Well, I had to put in a lot of extra canned tomatoes, broth and rotel to counter act it. The second time I added the taco seasoning 1/2 teaspoon at a time until it was just right. I think I put in 3 to 4 teaspoons (and I did not add the crushed red pepper in his recipe.) I played it safe spice wise as I was cooking for a crowd. The one thing I can say is that you can't go off how it tastes as you are cooking it. The flavor and spices blend together in the end and taste really smooth and fantastic!
