Slow Cooker Western Omelet

I made this overnight for an office brunch celebrating Administrative Professionals Day today. Since I am not a cook, I listened to my mother and sister tell me that the cooking time seemed a bit much for it to include eggs! I was afraid not to follow the recipe to the letter and followed the directions exactly and cooked it for 11.5 hours. It actually came out pretty good! It was eaten and it made a lot more than needed as some people do not eat eggs and others, no meat. I did not use ham but cut up sliced smoked mesquite turkey instead. I had to guess at the salt and pepper, but all told it was ok. I will make this again and cut back on the cook time and add some additional seasonings like others suggested which I read today AFTER I had made this the first time out!

Curried Coconut Chicken

This recipe was very easy to make and I followed the suggestion from others to use low fat coconut milk. Instead of regular sugar,I used to coffee packets of Splenda and added frozen baby peas. Out of fear this would be too sweet for my husband, I added about a tablespoon of hot sauce. This was perfect served over rice with steamed broccoli!

Sour Cream Burgers

I made these last night for a light dinner with a salad. They were Excellent! Since I cooked them on my George Foreman Grill, the flavors were not all there, but I have 8 more and I'm sure the taste will be more robust when I eat the last one! Since I didn't make them overly large, I was able to make 10 burgers! Thank you LAB1!!

Walnut Pumpkin Pie

I made this recipe for Thanksgiving actually and it turned out GREAT! My step daughter doesn't usually eat pumpkin pie, but once she had a piece she asked if I could make her one for Christmas at her house. It was a hit. You must follow the cooking procedure to the letter as I tried to make one last night and it was a flop because I forgot to cook it at the higher temperature first! It has a wonderful taste that is not "pumpkiny" at all. Thanks Jackie

Poppy Seed Bread with Glaze

I baked this bread for my sister's "goody day" at work today. It was exceptional! It is a quick recipe and she asked me not to use poppy seeds, but not to skimp on the glaze. It was a hit with her co-workers. Thank you Christina!

Chicken Puffs

I made these last week for a surprise graduation party for adults. They were excellent when they had just come from the oven! However, increased heat and humidity made them soft and not as tasty the next day. I would heat them up next time if they are not served warm from the oven. They are excellent nonetheless!

Baked Spaghetti I

I made this dish a few nights ago and found it "very" easy. The next time I make it, I'll add more water to the mushroom soup as it was so thick, it sat on top of the dish and baked. I'd like the mushroom taste to go further to the bottom of the dish. Otherwise, it is very hearty with a good taste! Thanks LaDonna

Pecan Sour Cream Pound Cake

I prepared this recipe for a Christmas party in December 2001. I'm not good at baking, but this cake was "perfect"! I used a one piece iron tube pan and reduced the cooking temperature to 280 degrees instead of 300 degrees. During the last 15 minutes, I increased the temperature to 300 because the cake was not browning nor fully done inside. When I removed it and inverted it onto a cake plate, I was amazed! It looked like a chef had prepared it. I put the glaze on while it was warm and when I left the party, I had an empty cake plate! WOW!
