This recipe changed my mind about this cut of meat. I've never cook it before, thinking it would be too tough to enjoy. So with some trepidation I put the ingredients together. The result was a cut of meat that was tender and oh so delicious!! I used meat tenderizer in place of the salt and added Tabasco. I rubbed the marinade into the meat that was scored into a diamond patten, put it into a zip lock plastic bag and marinaded it for 2 hours. I grilled it to a medium rare, then sliced it against the grain into thin slices. I like another review about making several packages and freezing them for future dinners. This will be a regular meal of mine from now on.
