Healthy Egg Salad

I only had regular mayo so not so healthy for me, but absolutely delicious. I used a little less hot sauce, since I have kids, and next time, I may use a little less mayo - it was plenty moist.

Easy Guacamole

My 9-year old made this almost entirely by herself - needed a little help cutting the avocado because they were not ripe, which made me worry, but the guacamole still turned out awesome.

Cincinnati Chili I

used 3 T cocoa mix in lieu of chocolate used extra cinnamon, and didn't use cayenne pepper, I like spice, but it was spicy enough. Added one can of pinto beans. Next time I will add two cans either pinto or kidney. Overall great flavors and I would make again.

Italian Sausage Soup

Just spectacular - and so easy. I used all sweet Italian since I wasn't sure my kids would go for spicy. I doubled recipe and added 1/2 cup barley - awesome. Also used pinto beans iinstead of Great Northern. I did add about 36 oz extra beef broth - but that may be because of the barley and extra zuchinni I had added. I will definitely make this again.

Kale, Quinoa, and Avocado Salad with Lemon Dijon Vinaigrette

This was amazing. My first time at kale and I loved it. It also looked so gorgeous on the plate I cannot wait to serve it to others. The only change I made was a regular yellow onion in place of the red, because I had no red. It was still awesome! And so easy to make. Served it with salmon grilled on cedar plank also on allrecipes, and also awesome.

Cranberry Apple Muffins

I love them. Yes cut the bake time to 20 min. I substituted about 1/3 c brown sugar for white. I also substituted about 1/3 of whole wheat flour for the white flour. My daughter will take them for 2nd grade snack tomorrow. We'll see how they go over with so many picky eaters. Also left out the coriander - but will try next time.

Brown Rice and Black Bean Casserole

My family thought this was great! I doubled recipe and at the end only added green chiles to the adult half, and left the children's half without. Everyone was happy. Although I could have gone with even more spice in the adult portion.

Long Soup

I thought this soup was really really good. I quadrupled the recipe which made a ton of soup. But somehow we managed to eat it all! I did not have enough chicken broth, so used a combination of Chicken broth, Veggetable broth and chicken boulion. I used a little less green onions because my kids aren't big on onions. They liked the noodles but not too big on the broth. I think it needs some slight tweeking - perhaps next time I will use a little more ginger. Also thought it was much better the second day.

Chicken and Potato Soup

My six year old and 2 year old loved it! My husband added tons of hot sauce. I just added salt and pepper to mine. I really enjoyed it. The only change I made was that I boiled the chicken the day before. I used the stock from that in place of the water. I used skim milk and a whole 15.5 oz can of corn.

Black Bean Tortilla Casserole

I followed this recipe pretty close, but added a little bit of chopped cooked boneless chicken breasts. Used regular cheddar instead of low-fat. It was so easy, and my husband says it is his absolutely favorite of any dish I've ever made! I cook a lot, so was shocked. I really enjoyed as well. Too spicy for the kids, but I think it would be easy to make a more bland version at the same time.

Slow Cooker Maple Country Style Ribs

We thought this was great. I followed recipe exactly and think the sauce was just right. I agree with one reviewer that the fat from the ribs is enough. Will definitley make again! So easy!

Spinach Lasagna III

The whole family loves this recipe. I will definitely use a lot more spinach the next time I make it. I keep forgetting how much the spinach shrinks when you boil it.
