Spinach Balls

Wow! I had never heard of spinach balls, but had to use up some fresh spinach, so I thought I would try these. These are really good! I didn't have stuffing, so I used italian style bread crumbs. I added garlic and white onion cooked in EVOO, then added the spinach in and added just 2 tbsp of butter at the end, then added to the dry ingredients, plus a little cayenne. I used shredded parmesan (didn't have any grated) and the result was sooo yummy. Even my super picky 5 year old, and my non-spinach loving hubby liked them! Thanks for the delicious recipe!

Soft Oatmeal Cookies

These are fabulous! I tried to healthy them up a bit my substituting 1/2 cup of the flour with 1/4 cup wheat germ and 1/4 cup whole wheat flour and you can't tell at all, even my kids love them! I left some plain, and then mixed in dried fruit, raisins and chocolate chips for a variety. Will definately make these again! Thanks!

Best Ever Jalapeno Poppers

These are delicious! They weren't as hot as I had hoped, so I did make a couple of changes. I blanched the jalapenos whole for two minutes, then seeded them once they were cool, they turned out hotter for me that way (the first time I seeded them and then blanched them). I used a 5 cheese blend, added extra bacon (not bacon bits), and used italian breadcrumbs, adding in some garlic powder and cayenne. These are a little time consuming, but so worth it! I thought they would be greasy being fried in oil, but they aren't. They also reheat in the oven wonderfully. Thank you for the amazing recipe! We can't stop eating them!

Fast and Delicious Black Bean Soup

Wow! This was my first attempt at black bean soup, and this recipe is a keeper. I took some of the suggestions from other reviewers, and used one can of refried beans and one of black beans, omitted the ham, carrots, and cumin, (didn't have any) and used a chili pepper instead of a bell pepper. I put it all in the blender after I sauteed the vegetables, then returned it to the pot to simmer. I also added lime juice, cayenne, and some tapatio. I am a very picky eater, and my husband isn't a big fan of soups, black beans or anything without meat, but we both actually really liked it! We had it for dinner, then the following day we added some more cheese (mexican blend) to thicken it up a bit and ate it with chips for lunch. Super yummy, our 3 year old even liked it! Thanks for the wonderful recipe!
