So, I used mild picante instead of salsa (because that's all I had), and EVOO and brown rice because that's all we use. I had to keep adding water and the recipe took WAAAAAAAAAY longer than directions indicated. -of course, I anticipated it to take a little longer because of the difference in rice, but this was exceptionally longer - like over twice as long. The flavor was ~ok. I was excited to switch up our usual plain 'ole rice with our fajitas, and it worked out great, really! I am interested to see how chunky salsa changes the flavor. Overall, I LOVE how heart healthy and NATURAL this recipe is. MUCH better than any store bought package and relatively easy to make.
