Out of this World Turkey Brine

Ease off on the salt just a bit, make sure you rinse your bird well before roasting, and if you use drippings for gravy and/or stuffing do NOT add salt -the salt from the drippings will be plenty. I've used this recipe since 2012 and always receive rave reviews on my turkey. I buy a frozen bird and let it thaw in the brine solution for 5 days in a 5 gallon bucket out in the garage (I live in Indiana, so it's plenty cool in the garage).

MeeMaw's 5-Star Coleslaw Dressing

Fine! Cut it down to 4 servings and that was plenty for enough slaw for my family of 5. I skipped the mustard, celery seed, and didn't have cider vinegar (used 1 Tbsp white and 1 Tbsp red wine vinegars instead). I also substituted 1 1/2 Tbsp Stevia for the called 3 Tbsp sugar. -no one noticed- everyone enjoyed! Will make this my go-to for slaw dressing in the future. Thank you!!

Classic Bran Muffins

Just pulled these out of the oven and WOW, I'm impressed. These are really, really good! I'm pretty new to this cooking healthy thing, so the recommended adjustments were welcomed. I used unsweetened applesauce and a few TBSP coconut oil in place of the vegetable oil, 1/3 c stevia for baking (made brown with molasses), whole wheat flour, a healthy tsp or two cinnamon, and a handful of dried cranberries along with the raisins. Using the stevia is unnoticeable, which I appreciate, and the cinnamon really shines through in flavor! I was worried about them being dry so I baked them for a short 13 min and then an additional 3 min. Perfect...no need for a pat of butter! Warm them up and go! **update** after several times of making these my husband requests them and even my 3 and 5 yr old enjoy them! We've thrown in raisins, dates, and walnuts, bananas, and even blueberries!

Mexina Salsa Verde

I followed the recipe. It was so spicy I couldn't eat it. So, I added three more green tomatoes. Still, WAY too spicy. I can handle some heat, but this was like tasting fire. Next time I'll start with just 1/2 a pepper and add to taste.

Best Spanish Rice

So, I used mild picante instead of salsa (because that's all I had), and EVOO and brown rice because that's all we use. I had to keep adding water and the recipe took WAAAAAAAAAY longer than directions indicated. -of course, I anticipated it to take a little longer because of the difference in rice, but this was exceptionally longer - like over twice as long. The flavor was ~ok. I was excited to switch up our usual plain 'ole rice with our fajitas, and it worked out great, really! I am interested to see how chunky salsa changes the flavor. Overall, I LOVE how heart healthy and NATURAL this recipe is. MUCH better than any store bought package and relatively easy to make.

Broccoli Chicken Divan

Taco Seasoning I

I skipped the cumin and red pepper flakes and it's perfect! I love that I can adjust the ingredients to achieve the appropriate amount of spice for my family. -And being able to control the salt for my husband with high blood pressure makes this a definite 5 star rating. Thank you!!!!

Baked Slow Cooker Chicken

the family raved at how juicy and tender this bird was! Not big fans of white meat, they tore into it and I used the leftovers in a chicken pot pie. Wonderful! I'll definately make this one again... and again... and again!!
