Cheddar Biscuits

I love this recipe as written and have made it several times. Then again, here are my usual changes that I prefer. I add 2T freeze dried chopped chives (thank you Penzeys)and 1/2 teaspoon Old Bay seasoning to the dry ingredients and use buttermilk instead of milk when I have it. I also cannot for the life of me measure out just one cup of cheese and usually end up with 1 1/2 cups :) I then brush midway though with garlic butter (made with 1/2 stick butter and 4 chopped cloves of fresh garlic melted/cooked) and brush again as it comes out of the oven. I usually end up with 12 biscuits.

Double Crust Stuffed Pizza

I just love this pizza. (my picture is currently 2 of 15). As others have stated, I too had to add a little extra flour to the dough. I also am quite free in my sauce choice since I usually go with what I have made and is in the freezer. For a family get-together, I don't make one huge pie anymore. I use mini spring-form pans instead. That turns it into a party and everyone can customize to their liking. One mini pan will usually serve two people. Or just my brother :)

Pita Chips

I wanted some pita chips while at the store and a bag of stacy's pita chips were 6.69. Really? So I bought a bag of pita bread for 69 cents. I made this exactly as stated and was a thousand time happier. I saved six bucks and these were really great warm out of the oven. I can't believe I actually had Chervil :)

The Best Chicken Salad Ever

I have made this as written and it was really great and easy to do. I wasn't a fan of the texture though and that's why the 4 stars. The second time I made this, I used up some smoked chicken thighs/leg quarters. That smoky flavor took this recipe over the top. I processed half of the chicken after the celery/onion and then folded in the other half chicken that I shredded instead. This made for a much better consistency, I thought. I also used red instead of white onion and added a half can of sliced water chestnuts because I really like a crunch to any salad recipe. Thank you Richard for a really great recipe.

Garlic Croutons

Great recipe as is. I made two batches with leftover stale sourdough. I used 8oz of cubed bread for each one and used the microwave to melt butter/seasonings. In the first batch, I used the butter/garlic exactly as written. In the second batch, I added 1/2 t Penzy's Italian Herb mix and 1/2t granulated garlic (in addition to fresh minced) and 1/2t onion powder and some S&P. I liked the additional herbs better but the original recipe was FANTASTIC!. I think I am done with store bought croutons from this point forward. Thank you so much for this wonderful addition to my recipe file.

Fried Rice I

After slicing and putting up my homemade hickory smoked bacon, I had plenty of "bits" leftover and this was the perfect go-to recipe. I made this as stated with the following exceptions since I didn't have some stuff. I substituted 1/4 C finely diced white onion for the green onion and sauteed it after the bacon along with 1 clove of minced garlic. I also cooked the rice in beef broth instead of water and then chilled it for 6 hours. Other than those minor tweaks, I made as directed. This was a lovely recipe, and a great jump off point for other variations. I cannot wait to experiment :)
