Chicken with Asparagus and Roasted Red Peppers

No leftovers! I sprinkled a little salt, pepper, and garlic powder on the chicken first and browned it well in olive oil with some onion and shallot before adding the broth. I also added a little white wine and a healthy dash of red pepper. Fantastic, will be making this again and again.

Fire-Roasted Tomato and Spinach Pasta

Italian Dressing Mix

I love this recipe, I make it all the time, with different kinds of vinegar but my favorite is balsamic. However, DO NOT use 2 tablespoons of salt!! That is WAY too much, and I'm pretty fast and loose with the salt shaker. It has to be a mistake. And also, I tried making this with olive oil but it congeals too much in the refrigerator so stick with the canola oil.

Soft Oatmeal Cookies

This is my favorite oatmeal cookie recipe. Very easy, you do not need to refrigerate in my opinion. I don't bother with the sugar and fork either. I just make them like regular drop cookies, adding a cup of raisins as suggested. The cookies come out so nice, crispy on the outside and soft in the middle. I guess I make mine smaller because I get 4 dozen from a batch.

Turkey Sliders

These were great; only thing I did differently was bump up the spices a bit - 2 cloves garlic, 1/2 tsp salt & 1/4 tsp red pepper flakes. My batch made only 12 because I guess I made them a little bigger, but that was ok because I only had 12 rolls. I found it helpful to rub some olive oil on my hands before making the patties, otherwise they stuck to my fingers. Will definitely be making these again!

Vegetarian Korma

I've tried several recipes for Indian cuisine, and this is the first one that actually met my expectations. I stayed pretty close to the recipe, except I added a few more spices and used light rather than heavy cream. I used yukon gold potatoes, diced, and they were perfect. Cant wait to eat the leftovers tomorrow. Will make this again.

Grilled Fish Steaks

This was really very good. I don't like a lot of fish --- can't stand salmon --- so I was on the look-out for a good recipe for grilled fish that I would like, as well as my husband. I followed the recipe exactly except I used a tablespoon of fresh basil that I had on hand instead of the dried basil. I topped it with leftover chopped parsley and served it with lemon wedges. It was really delicious, I will make this again.

New Mom Broccoli Kugel

Didn't think this was very good. Also didn't think it was particularly fast/easy to make. You have to remember to thaw the broccoli, grease the pan, saute the onions, get another bowl dirty to mix the ingredients, then bake for 90 mins...makes a mess and takes forever.

Pot Roast Dips

I've tried half a dozen similar recipes; this one is the best. When I went to start it, the plumber was at my house and I had no water, so I used beer instead, it was great. Also, I like to serve these with provolone cheese instead of mozzarella, less stringy. I slice the roll in half and layer it with a slice of provolone so it's less messy. Also, I like to add some pepperoncini to the sandwich! Delicious!

Pasta Primavera with Italian Turkey Sausage

This was delicious. The only change I made was to reduce the olive oil to 2 T and add just a little white wine to help dissolve the bouillon. Oh, I also broke up the sausage instead of slicing it, at my husband's request. I would not change anything else; will definitely make this again.
