Wonderful Gluten Free White Bread

My 8 y/o daughter has Celiac Disease, newly diagnosed. She has been so easy to please, but school lunch has been very bland. This bread was easy and delicious! I followed it exactly with the exception of using fast rising yeast just shy of a TBS because that was all I had, and using a slightly smaller loaf pan to make up for the lack of yeast. It came out GREAT! Sliced and froze individual slices wrapped in wax paper. ****I just made it for about the 20th time and substituted tapioca flour for the sorghum (only because I was almost out) and it resulted in an even softer, spongier slice :D

Strawberry Shortcut Cake

Delicious! Followed the recipe exactly. TIP: make sure your strawberries are completely thawed, even microwave them until they are luke warm. It will blend so much better while baking this way....I discovered by trial and error. :)

Chewy Chocolate Chip Oatmeal Cookies

Followed this recipe exactly, DELICIOUS! Tip: make sure you refrigerate your dough for a few minutes before baking and between batches...it keeps your cookies thick and fluffy!

Sweet Restaurant Slaw

This was SOOOO DELICIOUS! I was making it for a large gathering so I used 3 bags of coleslaw and only doubled the sauce....there was plenty. Also after making it a few times, I highly recommend using mayo over miracle whip (way too sweet w whip), and celery seeds over the poppy. Everything else is just to your taste. I used half the oil called for and used olive oil, an extra splash of vinegar, and fresh cracked pepper. Absolutley amazing...my mother-in-law said it was the best she had ever had!

Pumpkin Cheesecake Squares

Came out delicious and definitely plenty to go around. I did add more spice as others suggested and substituted white chocolate chips w cinnamon sprinkled on top in place of cinnamon chips. It was the hit of Thanksgiving!

Slow Cooker Split Pea Sausage Soup

Great Flavor! I also used 8 cups of chx broth instead of bouillon and water, however it was still a bit on the runny side after 6 hours on high in the crockpot. I used a stick blender and it evened out the consistancy. Delicious w beef sausage!
