About this Cook
Not a five-star cook by any stretch of the imagination. Excellent baker, though:) I have zero interest in spending hours on a meal. Usually sub all ground beef out with ground turkey instead and many of my meals are served with salad and heaps of veggies. I like easy, and think some people might like easy, too. Often use the crockpot - especially in winter.
My favorite things to cook
I make a mean shepherd's pie, and I have an awesome meatloaf recipe that even kids will eat. Love making belgium cookies, apple crumble, and always give out lots of Christmas cookies to family and friends.
My cooking triumphs
Made prime rib au jus to try to impress the inlaws. Spent hours on it and turned out fabulously!
My cooking tragedies
Took me a looooong time to get Haystacks/Boiled Chocolate cookies right for some reason!

Whole Wheat Ginger Snaps
Never made these before - will definitely make the Christmas cookie list this year:) Tried them out, as a friend requested SOFT ginger snaps as a birthday gift. (I always make people their fave cookie for their birthday.) The dough was a royal pain in the neck, though. Followed the recipe to a T up until I started working with the dough. Ended up adding another 1/4 cup of flour. Wish I'd known I needed to chill the dough first because I really didn't have time for that. However, they're a hit at home, and with my birthday friend!!

Succulent Roast Chicken
Good! Moist and tender, just how we like:) No lemons in the house, used lemon juice instead. Served with sweet potato fries and roasted zucchini. Will definitely make again!

Cola Pork Chops
Pork chops are usually pretty boring at my house. My family rolls their eyes when they know I've got some thawing. NO MORE! This was great! Browned them first with pepper, garlic and onion powders and baked for 30 minutes instead. YUM:) Thank you!!!!
