Kale and Adzuki Beans

This is excellent. I didn't have tamari so I used soy sauce like others suggested. I also sauteed onions instead of garlic. Ate with white rice. So good and super duper healthy.

Simple Garlic and Basil Pesto

This was excellent, but next time I would add a little more red pepper flakes and more nuts. I didn't have Brazil nuts or pine nuts, so I used walnuts.

Salisbury Steak

This was fabulous. I used onion soup mix dissolved in water instead of soup as another user recommended. I'm sure it wasn't as good as the real thing, but this was still one of the best dinners I've ever made.

Curried Carrot Soup

This soup was just wonderful. As others recommended, I sauteed garlic with the onion, used chicken broth instead of veg, and doubled the curry. I will make this often.

White and Wild Rice Pilaf

Made this with beef broth. It was delish. Needs a lot more liquid than called for, though. Maybe next time would add a dash of red chillies or hot paprika.

Italian-Style Baked Crispy Chicken Breasts

This was excellent, although I did alter some things based on what I had in the house and also on dietary restrictions. I left out a lot of things and it was still wonderful. I didn't use cheese because we don't eat cheese with meat, I used regular bread crumbs instead of panko, no lemon peel just lemon juice, and dry rosemary instead of fresh. I have never had such moist chicken breast, this was truly phenomenal. Will be making often.

Tuna Noodle Casserole from Scratch

Honey Curried Roasted Chicken and Vegetables

This was very good, but I didn't like the apples - too mushy. Next time I think I would add some peas. I used canola oil instead of butter. I put the veggies in a crock pot, the chicken on top, and sauce on top of the chicken. I cooked in on high for 1 hour, then medium for about 6 hours, then low for the last hour. DELICIOUS!

Spanish Moroccan Fish

Oh this was soooooooo good. I did everything according to the recipe except for the olives just because I don't like them. I cut the recipe in half but there was still A LOT left over. I thought it was perfect but husband said he wanted more spice.

Chicken Breasts with Balsamic Vinegar and Garlic

This was SOOOO GOOD!! My only complaint is that the sauce needs to be doubled. It is not hard to make and looks and tastes gourmet. Definitely something to make for guests and definitely will make again. I served it over whole wheat spaghetti (angel hair would probably have been better) and red wine.

Baked Slow Cooker Chicken

Oh yeah this was excellent. Didn't do the foil balls thing, just put onions and carrots under the chicken, sprinkled with paprika, thyme, salt and pepper and left it on low for about 10 hours. Turned out amazing fall off the bone chicken. Served over brown rice.

Delicious Stuffed Potato Pancakes

I enjoyed this very much. It could use some more salt though. I followed others suggestions about the meat - I made the meat mixture and then sauteed it, then followed the rest of the instructions. Came out delish.

Slammin' Salmon

This was exxxxxcellent. I make salmon very often, but husband said this was the best salmon I've ever made. I needed to come up with dinner quickly and didn't have time to marinate it at all - I simply threw all the ingredients on the salmon and baked it for about 15 minutes. Next time I will plan ahead and marinate.
