Greek Salad

The best salad I ever had! I used olive oil instead of vegetable oil/Crisco. I also used red onions instead of sweet onions. I kept the salad greens separate from the rest of the ingredients. I used a small mixing bowl to toss individual salads. Then top w/ the feta cheese. This makes alot of salad. Enough to last us through the week as a dinner salad!

Lentil and Smoked Sausage Soup

Yummy! This came out wonderfully! I used 1 (14 ounce) smoked sausage, without MSG, gluten or added nitrites. 1.5 cup of cabbage. 2 cubes of vegetable bouillon (I like Rapunzel Vegan with Sea Salt & Herbs because ingredients are organic & non-hydrogenated). 5 cups of water. 2 bay leaves. Everything else is the same as the recipe.

Award Winning Chili Con Carne

This is a recipe where you can add to your preferance. For me 3/4 tsp coriander, 1/2 tsp cumin, 2 cans of kidney beans instead of one, 2 bay leaves, 2 tbsp worcestershire sauce & 2 tbsp minced garlic.

Italian Sausage and Peppers with Penne

Simple & yummy! I used the sweet Italian sausage & added minced garlic & hot pepper flakes when I added the sauce to the skillet. I also used one red pepper, one green pepper & half of one onion thinly sliced (that's how my husband prefers the onion cooked & he's not crazy about too much onion.

Lemon Mint Iced Tea

Delicious! Thank you for sharing! Instead of using 3/4 cup white sugar I used 2/3 cup light agave nectar. I also substituted one regular tea bag for a green tea bag. The peppermint & frozen lemonade concentrate give the tea a perfect taste!

Creamy Mashed Potatoes II

I am not sure if the measurements are proportionate per potatoes. I added a little more, plus more butter, some milk, salt & pepper. However, just add ingredients to your taste. My mashed potatoes came out great!

Apple Walnut Salad with Cranberry Vinaigrette

Good stuff! I took the suggestions of using a 1/3 cup of red onions, a half cup of cranberries & soaking the apples in a lemon water bath. I did not have vegetable oil on hand, but I had walnut oil & it came out great. I would only recommend toasting the walnuts about 5 minutes.

Slow Cooker Pork Cacciatore

My husband does not like pork. Therefore I substituted pork for chicken thighs, which as I knew would fall apart & become shredded chicken. It was a little runny, just felt like it was missing something. I did season the chicken with season-all, pepper & garlic powder before I put it in the slow cooker. It does taste better the 2nd day though.

Northern Italian Beef Stew

I followed the recipe as is. I too used the stew meat as Sarah. My family & I very muched enjoyed this yummy stew. This recipe does make alot of stew. However, I'm okay with that. The only change was after cooking the vegetables, I put the cooked beef in the crockpot & added the vegetables in the crockpot. I cooked it in the crockpot for 4 hours. We like to season our soups/stews once it's in our bowls. My son used Tony's (cajun seasoning) in his bowl. I used a small amount of sea salt & Chalulah (almost like Tobasco, but much better taste).

Pretty good. Would prefer more sauce or for it to be more creamy. I would add more spices & I did use fresh mushrooms instead of canned.
