Low Carb Cheesecake
It tasted very fat free- not good! I make MUCH better- try this if you want almost carb free, with fat: 3 (8oz) blocks cream cheese- softened 1/4 cup sour cream whip until fluffy and add any artificial sweetener to taste. Beat 1 minute then add 2 eggs and continue beating til mixed. Add 2 tsp vanilla. Pour/scoop into (lined) muffin cups and bake 25 minutes at 350. Chill thoroughly before eating.

Apple Butter Pumpkin Pie
I used crabapple butter instead and substituted 8oz cream cheese for evaporated milk. The pie was amazing!

Easy Bacon and Cheese Quiche
I've been making a similar version since the 70s with rave reviews each time. The basic recipe is 4 eggs with 1 cup of cream (anything from lofat milk to heavy cream works- it's just a matter of how rich and decadent you want it to be) with a bit of Lawry's seasoning salt and ground black pepper. The crust can be homemade, or bought. If I don't have time for homemade I prefer Pillsbury's pop out crusts (deli) vs frozen. Put in whatever fillings you like- meats, veggies or cheeses. My favorite is campari tomatoes with fresh mozzarella and basil leaves.
