Jay's Signature Pizza Crust

I prefer to use whole grains whenever possible, so I used only one cup of all-purpose flour and the rest white whole wheat flour. Added 1 tsp Italian seasoning as other reviewers had suggested. I put all the ingredients in my bread machine on the dough cycle, and it was way too wet when it finished, so I had to knead out the dough some more with extra flour. Pre-baked the crust for 7 minutes on a well oiled baking sheet, then topped with sauce and veggies and baked for another 10 minutes. Turned out WONDERFUL. I'd been looking for a thick, chewy crust that wasn't too heavy, and this was PERFECT, even with the the whole wheat. Will DEFINITELY be making this again soon!

Roasted and Curried Butternut Squash Soup

I made several changes to the recipe, based on the suggestions of others. I used only 2 cups of vegetable broth and dropped the yogurt, but added a can of coconut milk instead. I added a handful of fresh cilantro to the blender as I was pureeing the mixture, then upped the curry powder to 2 tsp, upped the cinnamon to 1 tsp, and added a pinch of ground ginger. I also left off the oregano, nutmeg, parsley, and bay leaf. I used sour cream and extra cilantro for garnish. With all these changes, FABULOUS soup. My husband loved it. The only reason I didn't give 5 stars is because I made so many changes to the recipe.

Jeanie's Falafel

I've been making falafels from a box mix for a long time, but I wanted to try a from-scratch version. My family loved this recipe! I used dry garbanzo beans that I prepared myself instead of canned beans. The final mixture was too dry and crumbly to hold together, but I saw that another reviewer had suggested adding an egg. Since I don't use eggs, I added egg replacer instead, and I also added some water. With those additions, the mixture was perfect. To make it healthier, I fried the patties without oil. Big hit. I served them with baba ghanouj, hummus, cucumber dill sauce, homemade pita chips, and salad.
