Pumpkin Bread IV

I subsituted applesauce for the oil. I halved the recipe and used 2 8x4" pans, froze the leftover batter. The 2 8x4 pans took 30 minutes to bake. Pretty awesome, especially with some butter soaked in! Note - I used the exact amount of spices the recipe calls for - the pumpkin flavor come thru perfectly, and the spices were well balanced.

Slow Cook Thai Chicken

The garnishes make this dish! Must use! I followed others lead and upped chicken broth to 1 cup and decreased peanute butter to 1/2 cup. Also added the red pepper 1 hour before finishing and it was great. I tasted the peanut butter sauce before I added it to the chicken - it seemed too strong on the lime. But after adding it to the chicken mixture it balanced out. I don't like red pepper flakes, so just didn't add. Great over jasmine rice. Next time will add broccoli with the red pepper.

Carrot Cake

Changes: - Reduced oil to 1 cup - Added 3 tbsp of crushed/drained pineapple - Added a few shakes of ground nutmeg - Used "Cream Cheese Frosting II" instead Turned out great!!!

Sausage and Egg Casserole

Family loved it. I used 8 eggs and increased the rest proportionatly. Did not use mustard. I assembled in the morning and put it right in the oven.

Roasted Turkey Legs

This turned out good, but not great. I used onions instead of celery, and added carrots and onions to pan to roast. Put in about 1.5 cups of water to pan. I dry patted the legs, added salt, pepper, oregano and used oil to coat. Made enough gravy. Next time I will add more seasoning and cook for a longer time at a lower temp to get a moister turkey.

Apple Pie

I always cook my pie filling on the stove top first, then put it in the crust. The combo of flour/sugar/spice makes a solid yet juicy filling -- it is not runny at all. I omitted the ginger and added extra cinnamon.
