This dish had really great flavour! I opted to make it a main dish, adding rehydrated TVP (vegetarian) in with the rice to absorb some of the flavour during the last 5 mintues or so of cooking. I also sauteed a mix of green, red and orange peppers separately, as suggested by other reviewers. I also used brown rice, veggie stock and soy margarine, and omitted the parsley since I didn't have any. I enjoyed this dish and would make it again, perhaps adding some diced onion and/or other vegetables into the sautee.
