Granola Blondies

Delicious. I think that the taste of these blondies will greatly depend on the flavour and quality of the granola you use. I used a cinnamon apple granola that also had craisins in it, so instead of adding more dried fruit I added white chocolate chips, with great success! I also subbed about 3/4 of the oil with unsweeetened applesauce. I baked these as little two-bite blondies in a mini-muffin tin. They do end up a little dry on top, but the crispy-crunchiness is expected from the granola anyway. I have made these twice already and will definitely make them again!

Kidney Beans and Corn

I made this last night and was pleasantly surprised with how flavourful it was! I used what I had on hand: 1/2 white onion, 1/2 each green, red and yellow bell peppers, 1tbsp prepared mustard. I added nearly a tsp of cayenne, and I chose to rinse my kidney beans to reduce the sodium. I did add water in place of the liquid, however, and it took only about 10 minutes for the liquids to be nearly gone. I ate it just on its own, and it was delicious! Will surely make again.

Black Bean and Corn Salad I

Simple and so flavourful! I think that next time I might up the spices a bit, especially the cayenne, to give it more kick. I halved the recipe and mostly stuck to it, but used regular black pepper, only green onions, and fresh cilantro. Made it for a barbecue potluck -- I let it sit in the fridge overnight and the flavours were great!

Banana Banana Bread

Fantastic. I was looking for the perfect banana bread recipe to make for my banana-bread-loving dad for Father's Day, and this was surely it! It was moist, dense, and super banana-y, and absolutely scrumptious. My dad said it was the best he's ever had! The only modifications I made were subbing half the butter with unsweetened applesauce, adding a cup of raisins (Daddy's a raisin-lover, too) and a teaspoon of vanilla extract. This is the only banana bread recipe for me from now on! I'd love to try making muffins next time, maybe subbing all applesauce for the butter and adding chocolate chips or walnuts or craisins... I'm sure that anything can go with this recipe! Thanks!!!

Vegan Cupcakes

These turned out beautifully. They were moist and not too sweet, which is how I like my cupcakes. I used distiller white vinegar since I was out of apple cider vinegar, used a scant cup of sugar, and sunflower oil, that being all I had in the kitchen. I got exactly 18 medium-sized cupcakes. Next time I'll try to sub half the oil for applesauce to cut back on the fat, but I have a feeling that it will make them more dense. But I will definitely make these again!

Chinky's Mango Bread

This bread is FANTASTIC. It was so simple to make and tastes amazing! My family had bought a carton of mangoes yesterday but they weren't very good (many overripe and not very sweet), but they still worked excellently in this bread. I used only 1/4 cup sunflower oil and 1/2 cup unsweetened applesauce with great results, and I made one loaf plain and the other with raisins. Will definitely make again!

Sweet Pepper Rice

This dish had really great flavour! I opted to make it a main dish, adding rehydrated TVP (vegetarian) in with the rice to absorb some of the flavour during the last 5 mintues or so of cooking. I also sauteed a mix of green, red and orange peppers separately, as suggested by other reviewers. I also used brown rice, veggie stock and soy margarine, and omitted the parsley since I didn't have any. I enjoyed this dish and would make it again, perhaps adding some diced onion and/or other vegetables into the sautee.

Couscous with Chickpeas and Carrots

Easy, quick and simple, yet flavourful and filling. I used veggie broth and omitted the parsley, and doubled the garlic and onions out of personal preference. Will make again!

Lentils And Spinach

I just made this for dinner tonight and it was DELICIOUS! I wilted fresh spinach on during the last 5 minutes of cooking, as suggested by previous reviews, though I definitely could have used almost double the spinach that I did. I also upped the amount of lentils to about 3/4 cup, and dissolved just a 1/4 of a vegetable bouillon cube into the water for some extra flavour without adding too much sodium. I seriously cannot get over how amazing this was! I will definitely be making it again soon!
